How do I stop my pie crust from shrinking????!


Question: If you are referring to prebaking (without filling) you need to fill the shell with dry beans or rice - then after the beans or rice cool store in a zip-top bag or jar and label "FOR BAKING ONLY" they won't cook right after this use but can be used again and again to secure the crust size and shape. Additionally be sure to perforate the bottom of the crust to cook more evenly. Good Luck!

baste it with butter
if it is shrinking then you are over mixing it. it will become elastic like if you mix it too much, and , then it will shrink.
If you are making it from scratch then add more butter or don't mix so much.... If you are buying one.. (it doesn't normaly do that..) but if so.. brush butter all over and it SHOULD solve your prolbem!!!
If you are pre-baking the shell, fill the bottom with dried beans or specially made "pie weights." That will help.

Try putting a little butter around it and also make sure it is thawed out. Take a fork and easily poke a few holes in the bottom, bake it for just a few minutes not done but a short time. Then put the rest of the filling in it and complete the bake. So the short time if they say bake at 350 for 45 min then without the filling you would bake just the crust for about 20 take or give a little, when it is cooking place some beans or rice in the shell. This helps hold the shape and they can be used many times after. Hope that helps.
