Eggless recipes for classroom treats?!


Question: My son's classmate is deathly allergic to eggs but I still would like to send off a classroom treat that she can have. I've asked this before but would like to see some more thoughtful answers. I don't want jello or rice krispies treats, obviously as there are tons of chemicals in those. I'm looking for cakes or cupcake recipes, 100% from scratch, and kid-cute.

Egg-free Nut-Free Vanilla Cupcakees
preparation time: 15 minutes
cooking time: 20 minutes
makes: 12


1? cups all-purpose flour
1 Tbsp baking powder
pinch of salt
2/3 cup soft, light brown sugar
1 Tsp vanilla extract
2 Tbsp corn or other flavorless nut-free vegetable oil
1 Tbsp white wine vinegar
1 cup water


Preheat the over to 350 degrees F. Line 12 sections of a tartlet pan or small muffin pan with paper cupcake liners.
Sift the flour, baking powder, and salt into a bowl. Stir in the sugar.
Add the remaining ingredients and beat until you have a smooth, liquid batter.
Pour or ladle the batter into cupcake liners, filling up to a?? inch from the top of the liner. Bake in the oven for about 20 minutes or until risen and firm to touch.
Transfer to a wire rack to cool.

For a children’s party, decorate the cakes with glace icing and a cherry on top. To make the glace icing, sift a generous 1 cup of confectioners’ sugar into a bowl. Add 2-2? tbsp of water and a few drops of food coloring, if desired, and mix to a thick, spreadable cream.

EGGLESS CAKE

10 oz flour
10 oz cold tea
5 oz cup sugar
15 oz cups fruit
2 oz margarine
1 tsp spice
1 tsp baking soda
2 tsp treacle

Put tea, sugar, fruit, margarine and treacle into pan. Bring to
the boil and simmer for 30 minutes. Allow to cool. Sift in flour,
spice and baking soda. Bake for 1 hour or a little longer in a
moderate oven.
This isn't sugary but the kids will have fun making them:

Bugs On A Log

celery cut into 6in sticks
peanut butter (if no one is allergic)
raisins

lay sticks with curve up (like a u)
spread pb on top using plastic spoon or knife
place raisins on top to be the ants

These aren't cakes or cupcakes but you could make "dirt" in the cupcake pan w'liners. If you put in a gummy worm they love it.
You could do ants on a log which is celery with peanut butter and raisins, or you could get some eggless bread and make little chocolate sandwiches with strawberries and bananas in them. You could even make a face with them like the bananas for eyes chocolate for eyebrows and then a sliced strawberry for a mouth.
Leslies Slice (I got this over 20 years ago from playgroup friend)

1 Cup Self raising flour
1 Cup Coconut shreds
3/4 Cup Sugar
3/4 Cup Soy milk (unflavoured)
3/4 Cup dried fruits. My boys prefer apricots, finely sliced.

Mix all together. Bake in lamington pan for 20-30 minutes at 375F or 190C.

If you double the recipe - remember to cook for longer.
