Does anybody have a family recipe for apple salad?!
1 c. each diced unpeeled red apple and yellow apple
1 lg. banana, peeled and sliced
1 c. sliced celery
1/2 c. broken walnuts
1/2 c. flaked coconut
1/4 c. mayonnaise or salad dressing
1 tbsp. sugar
1/2 tsp. lemon juice
1/2 c. whipping cream
Combine diced apple, banana, celery, walnuts and coconut. Blend together mayonnaise, sugar, lemon juice and dash salt. Whip cream; fold whipped cream into mayonnaise mixture. Gently fold into apple mixture. Cover; chill. Arrange salad greens into bowl; spoon in salad. Garnish with apple slices, if desired. Makes 6 servings.
APPLE SALAD WITH HONEY - YOGURT
DRESSING
3 Granny Smith apples, unpeeled and diced
2 stalks celery, thinly sliced
1 lg. carrot, scraped and shredded
1/2 c. golden raisins
1/2 c. coarsely chopped pecans, toasted
Honey-Yogurt Dressing
Lettuce leaves
Combine apples, celery, carrot, raisins, and pecans in a large bowl. Pour Honey-Yogurt Dressing over apple mixture; toss gently to combine. Cover and chill 2 to 3 hours. Serve salad in a lettuce-lined salad bowl.
Makes 6-8 servings.
HONEY - YOGURT DRESSING:
1/2 c. plain yogurt
2 tbsp. vegetable oil
2 tbsp. honey
1 tbsp. white wine vinegar
1 1/2 tsp. Dijon mustard
1/8 tsp. salt
1/8 tsp. pepper
Combine all ingredients in a small bowl and stir well with a wire whisk.
Makes 3/4 cup.
CRUNCHY APPLE SALAD

1/2 c. drained pineapple tidbits (sm. can)
1/2 c. raisins
1/2 c. coarsely chopped pecans
1/3 c. mayonnaise or salad dressing
Place apples, bananas and lemon juice in a bowl and toss. Add pineapple, raisins and pecans. Toss lightly. Add mayonnaise and toss just until mayonnaise is mixed thoroughly. Spoon into individual lettuce cups or into salad dish lined lettuce leaves. Makes 6 servings.
RED APPLE CHICKEN SALAD
1 pkg. chicken breast boiled
1 apple, finely chopped
1-2 pieces celery, finely chopped
Salt and pepper to taste
Salad dressing
Cook chicken breast until tender. You can add onion and celery to season chicken while cooking.
Debone and refrigerate.
Chop fine with chopper or knife. Mix chicken, finely chopped apple and celery and seasonings. Mix well. Add enough salad dressing to consistency needed. Serve on lettuce leaf, in sandwiches, or in baked pastry tarts. Keeps well in refrigerator.
