What are some good casseroles or slow cooker recipes?!

Here are some of my favorites:

1. Pork Roast with apple saurkraut: 1 Pork Roast, 1 jar saurkraut, 1 granny smith apple, 3 T brown sugar, salt, pepper, onion. Season roast with salt and pepper and sear on all sides (opt.). Mix drained saurkraut with diced apple and brown sugar. Cut onion into quarters and place on bottom of crock pot. Top with roast and pour saurkraut over it. Cover and cook for 6 -8 hours. Serve with mashed potatoes and roasted veges.
2. Lasagne: 2 lbs turkey Italian sausage, 1/2 yellow onion, diced, 1 28 oz can tomato sauce, 1 15 oz can diced tomatos, 1 tsp fresh ground pepper, 3 T dried Italian herbs, 1/2 cup olive oil, 1 16 oz box Velveeta cheese, 1 6 oz bag shredded Italian cheese, 12 sheets lasagne noodles. Remove sausage from casings and saute with onion. Drain if necessary and add tomato sauce, diced tomatos, pepper, herbs and olive oil. Bring to a boil and reduce to simmer. Simmer for 30 minutes. Cut Velveeta into 1/2 inch slices. Boil pasta according to package directions. Layer sauce, pasta, sauce, cheeses, and repeat ending with sauce. Top with remaining cheeses and sprinkle generously with parmesan. Bake for 45 minutes or until bubbling and cheeses have melted. Serve with green salad and french bread.
3. Pork chops and Mac and Cheese: 4 -6 bone in 1/2 inch chops, 1 -2 packages Kraft Mac and Cheese, 1 3 oz package cream cheese, 2 T blue cheese crumbles, 2 oz fontina cheese, 1/2 yellow onion sliced into rings, 1/2 cup milk. Season pork chops generously with Seasoned Salt and pepper. Saute in olive oil until browned. Remove and drain excess oil. Add onions to oil and saute until translucent. Remove from oil and drain. Make mac and cheese according to package directions, adding additional cheeses and milk. Place in greased baking dish. Place chops on top of mac and cheese and top with grilled onions. Cover and bake for 30 - 40 minutes, or until chops are cooked thru. Serve with fresh green beans.
Jambalaya. I don't use a recipe, it's a "throw it together" kind of thing. I start with chicken and smoked sausage, tomatoes, onion, peppers, spices, and let it cook in the crockpot all day, then 30 minutes before serving, add shrimp and cooked rice. Yum!!!
This is always a hit with my family!

Chicken Delicious
12 bonesless, skinless chicken breast halves
1/4 cup lemon juice
1 tsp. salt
1/2 tsp. black pepper
1/4 tsp. celery salt
1/4 tsp. paprika
10 3/4 oz. can fat-free, low-sodium cream of mushroom soup
10 3/4 oz. can fat-free, low-sodium cream of celery soup
1/3 cup dry sherry, or white wine
grated fat-free, low-sodium Parmesan cheese

1. Mix together lemon juice, salt, black pepper, celery salt, and paprika in medium-sized bowl. Stir in mushroom and celery soups and sherry or wine.

2. Dip each chicken breast half in seasoned soup mixutre, then place chicken pieces in slow cooker.

3. When all chicken is in cooker, pour remaining soup mixture over chicken. Sprinkle with cheese.

4. Cover. Cook on low 8-10 hours.

5. Serve with rice
try my fish stew king mackerell in a can use 2 cans save juice pull apart fish take out grissles and bones tear in chunks put in a pot add juice 1/4 pot of water add celery /onions1half cup rice4 slices cut up bacon red crushed pepper to taste a pinch garlic powder and a can of whole corn add butter 2 tsp 1 irish potato cut up in cubes its a great dish in cold weather next 1 zuchinni sliced in quarters then halved.
1 Squash sliced then halved
1 LB mushrooms sliced
2 Celery stalks sliced
2 LBs shrimp peeled and cleaned
1 LB crawfish tails
3 TBSP butter
1 TBSP extra virgin olive oil
1/2 Green and 1/2 RED bell pepper chopped.
2 TBSP fresh chopped parsley
1/2 TSP cayenne pepper
1/2 TSP fine black pepper
Salt to taste
1 TBSP Tony's seasoning mix
In a large skillet combined all ingredients except shrimp and saute until softened. Add shrimp and continue cooking until shrimp is done. SERVE.
