Pepper Steak Soup or Stew??!
I'm not fond of canned soup but Pepper Steak soup sounds like it would be GOOD! Now just how would I go about making it??
Answers: I saw that Campbells Chunky has a soup called "Pepper Steak" and was just curious if anyone actually had a recipe for something like this??

PEPPER STEAK SOUP
1 1/2 lbs. sirloin or other beef, well trimmed
12 oz. fresh mushrooms, sliced
3 whole green bell peppers, julienned
1 1/2 sm. Spanish onions
3 whole cloves garlic, minced
1 1/2 c. butter
3/4 tsp. whole thyme
3/4 tsp. whole rosemary
3/4 tsp. black pepper, freshly ground
1 tbsp. whole basil
1 c. flour
4 1/2 c. beef stock or consomme
3 3/4 c. V-8
Dash Worcestershire sauce
6 tbsp. red wine
Sour cream (for garnish)
Parsley, chopped (for garnish)
Melt the butter in a heavy pot and brown the meat over medium-high heat. Add the vegetables and garlic. Saute until the onions are just transparent, while stirring constantly. Remove from heat and stir in the flour. Add the beef stock, while stirring constantly with a wire whip. Return the pot to low heat and add all remaining ingredients. Simmer, stirring occasionally, for 30 minutes. Taste and adjust seasonings to personal preferences. Serve garnished with a dollop of sour cream and sprinkling of chopped parsley. Serves 12.

Take a steak, fry it, dice it up, cover with broth and boil it. I would add some onions also, and a dash of tabasco.
use whatever steak you want and just cook it like a reg. soup...

2 tablespoons butter or margarine
2 tablespoons diced red onions
1/3 cup diced green peppers
1/3 cup diced fresh celery
2 tablespoons all-purpose flour
42 cups water
3 beef bouillon cubes (to taste)
4 cups half-and-half
1 cup cooked potatoes, pieces (microwaved or baked)
black pepper
cayenne pepper
5 ounces cooked rib eye steaks, cut up (baked or fried)
1 tablespoon cold water
1 tablespoon cornstarch

It does sound good. I would get a good 'pepper steak' at the fresh meat counter, and cook it, then cut it into 'slices' that are about 2" long ... make a good 'soup stock' using beef broth with 1/2 cup of coffee, and add some sliced potatoes, carrots, and onion. When it's 'soft' add 1/4 cup corn starch that has been mixed with 1/2 cup COLD water, stir until thick.
You could add some 'Italian seasoning' if you want, or just serve it 'plain' ... put the salt and pepper on the table so people can add those to their own taste. Serve with some hot sourdough rolls and if it's a 'fancy' dinner add a salad with a nice vinaigrette dressing. YUM.
