The longer it simmers the more flavor it will extract. The key is simmer. Put the chicken or parts in a stock pot cover with cold water, add diced onion, carrots and celery. bring to a boil and immediately bring down to a simmer skimming from time to time. This will produce a richer tasting stock and it will not be cloudy. Add some black pepper, thyme, parsley stems, a bay leaf or two into a piece of cheese cloth, tie it closed and add to the stock. Do not add salt, as the stock cooks and the liquid evaporates, the salt may become overbearing. It should simmer anywhere from 2 1/2 - 4 hours, your call. As for the chicken meat, you may want another pot on the stove with chicken breast in it to add to your soup, as the chicken in the stock will be edible but not much texture or flavor left. About 20-30 minutes should poach the breast meat just fine. It seems laborious but make a large batch and freeze the rest, you'll have homemade stock at your disposal 24/7.Before you freeze it, bring the temperature down by putting the stock pot in a deep sink filled with ice water and and let it cool, put the stock in the refrigerator and when the fat has coagulated skim it off...have fun.
You cook it pretty much til the meat is completely done, and it seems to fall off the bone, add your spices, boil it, have it covered for around 20 mins last 10 mins take off the cover to let it reduce.
simmer it on low heat with just enoughseasoned water to cover it.
It should be cook until the joints are tender and the meat is about to fall off.
Suggested seasoning would include... celery, onion, carrot, thyme, garlic, sage, poultry seasoning, rosemary, black pepper,
I just go to the local store and buy a rotissery chicken.
It's far cheaper and saves you a heap load of time.
on the average, it's same price per lb, cooked already for you. Just pull and cut off all the meat you want. it's super
easy and the meat is always fantastic.
