Change to: servings US Metric
1 (11 ounce) can white shoepeg corn, drained
1 (15 ounce) can black-eyed peas, drained
2-3 roma tomatoes
2/3 cup fresh cilantro, chopped
1-2 avocado
1/3 cup green onions, chopped
Dressing
1/4 cup olive oil
1/4 teaspoon garlic (minced, chopped, whatever)
1/8 teaspoon black pepper
1/4 cup garlic red wine vinegar
1 teaspoon cumin

Mix all dressing ingredients together and set aside.
Mix all veggies together in a large bowl.
Add dressing and mix together well.
If you can wait, give the mixture an hour or so for the flavors to really come out. The longer it sits, the better it tastes. But it's delicious to eat straight away too.
Note: I rarley use the exact ingredient amounts. It's good to substitue black or red beans for the pinto beans or to use regular corn for shoepeg. I've used red wine vinegar in place of garlic red wine vinegar as well. You can even add hot sauce if you like spicy. I always double the recipe (but not necessarily the dressing) and eat on it for days. It's good in burritos, pitas, or on top salads, anything really. It's a very flexible recipe
COWBOY CAVIAR

1 (15 oz.) can black beans
1/4 c. onion, finely chopped (1 sm.)
2 tbsp. lime juice
1/4 tsp. cumin, ground
1 (8 oz.) pkg. cream cheese, softened
3 green onions with top, sliced
4 oz. ripe olives, chopped
1 clove garlic, finely chopped
1/4 tsp. salt
1/8 tsp. pepper
2 eggs, large hard boiled

Drain and rinse the beans. Drain the chopped ripe olives. Peel and slice the eggs. Mix all ingredients except cream cheese, eggs, and green onion. Cover and refrigerate at least 2 hours. Spread cream cheese on serving plate. Spoon bean mixture evenly over cream cheese. Arrange eggs on bean mixture in ring around the edge of the plate; sprinkle with green onion. 12 servings.
I was looking for a recipe and log on to bakespace.com and with 15 minutes on their forum I found the recipe I had been looking for years. your talking Texas caviar! I make it all the time and serve it as a side dish usually but would be good with chips. I don't really have a written out recipe but i will work on it and put it up on my bakespace account

but I'll give you my quick idea of how i make it

Texas Caviar

1 bottle of zesty Italian dressing
3 cans black eyed peas
2 stalks of celery
2 Jalapenos or to taste
3 Tomatoes
1 Onion
1 bunch of Cilantro
1/2 cup of cucumber ( opt)
2 cloves garlic
pinch salt
everything except peas are chopped to your like. Mix all together and add zesty dressing and chill for a few hours. It's good with BBQ chicken
