How do you know when a cheesecake is done?!


Question: Me is right. Most people DO overcook cheesecake because it will continue cooking after you take it out of the oven. Cook it as some of these people say and it will not be very good. They probably overcook other items as well! It is supposed to be wiggley all over the top - NOT hard!
Follow the directions for the time they recommend - they're perfected the recipe, hopefully, and it will come out all right.

It wont be jiggly anymore.
Most folks bake cheesecake way too long! Cheesecake is "done" when the sides are puffed but the middle still wiggles a bit. When you take it out it will fall slightly, but you'll end up with a dense and moist product.
when it is nice and firm all over the top . i usually bake mines for about 10 minutes in the oven on 300degrees and put it in the freezer for about 30 minutes then it is usually firm after you do that and it wont be too brown at the top .
a toothpick should come out almost dry. not totally, but almost. If it is cracking on top it is done. If it comes out too dry, put strawberries or blueberries with syrup and it will be ok. Bakers secret!!!!
