HOMEMADE CRACKER JACKS

24 cups popped corn (1 cup unpopped)
1 cup butter or margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 cup whole peanuts
Set oven to 250 degrees.
Put the popped corn in a large bowl.
Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
Then boil for 5 minutes WITHOUT stirring (this is important, DO NOT stir for 5 minutes!).
Remove from heat, and stir in baking soda and vanilla.
Add in peanuts; stir to combine.
Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
Remove from oven; cool.
Break into pieces.
Store in a tightly covered tin box.

DIRECTIONS

Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
HOMEMADE CRACKER JACKS

1 c. brown sugar
1 stick butter
1/4 c. Karo white syrup
1/2 tsp. salt
1/2 tsp. soda
3 or 4 qts. popped corn
1 c. skinless raw peanuts

Combine first 4 ingredients. Place in microwave, full power for 2 minutes. Stir in soda, pour over corn that has been put in brown paper bag that is well sprayed inside with Pam. Cook in microwave 1 1/2 minutes. Shake, cook 1 1/2 minutes more. Pour out and spread on big cookie sheet. Be careful, this hot syrup makes a bad burn.

My church made peanut brittle. After the mixture of the peanut butter was poured into pans what remained in the pot, we would put popped popcorn in the pan and mix it around.

What was left on the pan made the popcorn like cracker jacks.

I think you could make the stuff like you are going to make peanut brittle then pour in over a bowl with popped popcorn and stir.

You might not want to make as big a batch as if you were making peanut brittle.

of course cracker jacks have peanuts in them too.

CARAMEL POPCORN (CRACKER JACKS)

4 quarts popped corn (measured after popping)
1 16 oz container peanuts (optional)
1 cup light brown sugar
1 stick butter
1/4 cup white corn syrup
1/2 teaspoon vanilla
1/3 teaspoon salt

Preheat oven to 250°F degrees.
Measure 1 cup of light brown sugar into a medium saucepan (with high sides) and stir in 1 stick of butter, 1/4 cup of corn syrup and a pinch of salt.

Bring to a boil, stirring constantly (set timer for 2 minutes).

Remove saucepan from heat and quickly stir in 1/2 teaspoon of baking soda and vanilla (mixture will foam up). Stir mixture down.

Using a pot or bowl which is large enough to hold all of the popped popcorn, combine popcorn and hot mixture, stirring and tossing to mix thoroughly using a large spoon greased with butter. Add peanuts (optional). When pouring liquid over popcorn be careful because the mixture is HOT.

When thoroughly mixed, spread the coated popcorn on a greased baking sheet. Do not overload the baking sheet; bake in multiple batches if necessary.

Bake 15 minutes at 250°F; turn over using a silicone spatula and bake another 15 minutes.

Allow to cool thoroughly and store in air-tight containers in a cool place.

The only thing you'll miss is the prize!

This recipe was given to me by Jean Moore a family friend for years. this recipe brings back great childhood memories of hanging out at her house with her kids and eating this popcorn and watching movies.

21/2 quarts ( 10 cups ) popped popcorn
( Air pop is the best)
1/2 stick butter
1/4 cup white corn syrup
1/2 cup brown sugar
1/4 teaspoon salt

Microwave the above on high in a 4 cups glass measuring cup for 4 minutes.

Put the popped popcorn in a large brown paper bag.( 10 cups)

1 teaspoon vanilla
1/4 teaspoon baking soda
add to cooked syrup ( might boil a little but not to worry) stir until creamy.

Pour creamy sugar syrup on popcorn in the brown paper bag and shake.
Put bag and all in microwave and microwave on high for 11/2 minutes on high. shaking every 30 seconds. pour out onto a baking sheet and cool.
