I have two chicken breasts and some red skinned potatoes, what can I do?!
Answers: I'm at a loss for how to cook these together, any suggestions?
CHICKEN BREAST WITH ROAST POTATOES AND
GARLIC
For each serving: 8 to 10 lg. garlic cloves, peeled 1 skinned, boneless chicken breast 2 to 3 (2 inch) red skinned potatoes Dried oregano and basil
Pour olive oil in baking pan. Add garlic cloves and stir to coat with oil. Place in 350 degree oven for 10 minutes. While garlic is baking pat chicken dry. Scrub potatoes but leave peel on, cut in half. Remove baking pan from oven, add chicken and potatoes, and baste with oil. Sprinkle with equal amounts of oregano and basil to taste. Cover pan with lid or aluminum foil. Return to oven and bake 45 minutes or until potatoes are tender when pierced. Chicken will be done and garlic will be soft and sweet tasting.

marinate the chicken in Italian dressing and bake for 30 min uncovered @ 350 degrees. Wash potatoes and quarter them,drizzle evoo and oregano, cover with foil and bake same as chicken.
Cut the potatoes into wedges put them in a casserole cube the chicken breasts and add a bit of olive oil and some spices, toss everything together and cover with a foil sheet. Place in a 350 oven and bake it for 1 1/2 hours.

(My neighbor gave me beets and dill from his garden. I'd never cooked with either one, so I searched allrecipes and found a recipe for creamy beet soup with dill that was out of this world!)

1 (8 oz.) bottle Zesty Italian dressing
4-6 potatoes, peeled & cut in chunks
Put chicken and potatoes in a baking dish; pour Italian dressing over all. Cover and bake at 350 degrees for 1 hour and 30 minutes.
Fried chicken breast along with fried potatoes with onions are great also.
If you have vodka marinate the breasts in vodka fo 30 minutes. Microwave the potatoes in a baggie until soft. take the breasts with the vodka and fry on low heat until cooked. cut potatoes in half and place on top of the breasts garnish as desired with parsly salt pepper and enjoy...
try this beeee-aaaa-utiful twist to chicken. it's called 'chicken pinwheel kabobs'
u'll need: skinless chicken breasts
1 oz of fresh basil leaves (is at giant eagle in a small plastic pouch)
tomato paste
minced garlic
kabob skewers
uncooked bacon slices
now, here's whatcha do
rinse and trim the chicken. then u need to take a knife, cut each one in half to make the next step easier. when u cut the chicken, the sharper the knife, the better. slightly pull it open as u cut and it's easy to slice the breast in half.
now take the chicken, pop it in a sandwhich bag, and flatten to 3/16". flatten to an even thickness.
now its time to prep the sause filling.
for the sause:
1 crushed clove of garlic per 2 tablespoons of tomato paste.
u can get a jar of minced garlic instead of cloved garlic; 1/2 teaspoon will equal 1 clove of garlic.
now for the fun part:
take ur flattened chicken, spread the tomato/garlic mixture evenly over each piece about 1/4" from the edges. then put 1 slice of bacon on top of that, then put some of the basil leaves over that.
this next part is tricky; the thinner the chicken, the easier it is. roll up each chicken breast firmly, but not so tight the sause oozes out. i highly recommend that u at first secure each roll-up with toothpicks, and stick in the freezer for about 5 mins to firm the rolls up....u'll realize why in the next step.
after 5 mins, take the rolled up chicken, and with a sharp knife(sharper the better), cut into 4 thick slices. on each kabob skewer, put 4 spirals on.
lightly brush them with oil on both sides. put skewers on broiler pan and broil on low for 5 minutes per side 6" from the coil. advisory: crack the door open when using the broiler. it wont take long.
about 3 of these spirals will do the job for me. serve with fresh tossed salad with dressing of ur choice.
btw, wait till ya crack open that basil. omg it smells sooooooo good.
for the potatoes, i suggest cutting them up into bite sized pieces, add some chopped onion, wrap all this up in aluminum foil. bake at about 450 for about an hour or until soft. or, u could just put em in the deep fat fryer.
