canned peaches is just peaches, peach pie filling is peaches with the added flour, sugar and maybe a little lemon juice added to make the syrupy filling that you find in a pie
The difference of peaches in a can and pie filling is that the can has the jucie and the pie filing has the richness of the juice its more thicker then the can. the pie filing is more sweeter then the can. that's how you can tell but you caould also could of used frozzen peaches too.
Peach pie filling is more like a prepared pie. Normally you just pour it into a pie shell and bake or other simple recipes. You can use canned peaches to make peach cobblers, but you need to add ingredients to them to make thick it such as a little flour.
