Blend together 1 lb. of crab meat, 1. cup of medium fine bread crumbs, 2 beaten eggs, 1 Tbsp, dry mustard, 1/4 Tsp. each of dry thyme, salt and pepper, or use a dash of cayenne. Form into small cakes keeping the edges straight, not ragged. Dip into egg beaten with a little water, then into cracker meal and fry in deep, hot lard.

Description :
Crabcakes:
1 extra large egg, beaten
1 T mayonnaise
1/4 t curry powder
3-4 drops hot pepper sauce
1 t Worcestershire sauce
1 T lemon juice
1/8 t ground cloves
1/8 t cayenne pepper
1/2 t paprika
1/4 t dry mustard
salt & pepper
1 lb. fresh lump crabmeat
3-5 T bread crumbs
4-6 T corn or peanut oil

1. Combine egg, mayo, seasoning.
2. Add crabmeat and enough breadcrumbs to absorb excess moisture (it is important not to add too much). Stir carefully to blend. Mixture should be firm to hold together.
3. Form 6 patties and place on wax-paper, uncovered, for 15 or 20 minutes to dry slightly.
4. Heat oil in large skillet and saute over medium heat until golden brown. Turn and brown on second side. Serve with sauce.
Sauce:
1/4 red bell pepper
1/4 yellow bell pepper
1/2 jalapeno pepper
1 cup cold unsalted butter, diced
1/2 cup chopped fresh mushrooms
2 shallots, chopped
1 sprig fresh thyme
1/4 cup dry white wine
1/4 cup white wine vinegar
1/2 cup chicken stock
1/4 cup lemon juice
1/4 cup heavy cream
Fresh lemon juice
salt & pepper
1. Place seeded, deveined pepper sections under the broiler until charred black. Discard skin. Dice pepper small and set aside.
2. Heat 1 T butter over medium heat. Saute mushrooms, shallots and thyme for about 2 mins.
3. Add wine, vinegar and stock, cook over high heat until liquids reduce by 1/2. ~10 mins.
4. Add cream, reduce again by 1/2. ~5 mins.
5. Over low heat, whisk in rest of butter, piece by piece, to make emulsion.
6. Strain & seasono sauce to taste with lemon juice, salt & pepper. Fold in diced pepper. Serve warm.
Boil them in water and leave a dish of melted butter for dipping. You can always use them in casseroles too. My favorite is crab meat with cheese.

dont cook them after they have died, they will stink!
boil them in crab or seafood boil. with onions, lemon juice and mushrooms and add some whole garlic cloves. throw some salt in there too and whatever other seasons you feel like. old bay works good.
If they are dead and you haven't cooked them then you can't eat them - they have to be boiled alive. You could get salmonella - that would not be fun.
Boil lots of water w/ salt, cilantro, parsley, garlic, onions n 2 cans of beers.....
you can' t cook crabs when they are dead so you need to throw them away or you will get really sick .
Next time use water - a beer - and vinegar and a half cup of old bay and steam live crabs .

OLD BAY Steamed Crabs
This classic Mid-Atlantic favorite features steamed crabs, seasoned with OLD BAY Seasoning.
Ingredients
Water
Vinegar
1 dozen crabs*
1/2 cup OLD BAY? Seasoning
Directions
1. Use a pot with raised rack (minimum of 2 inches high).
2. Add equal quantities water and vinegar to just below level of rack. Bring to boil.
3. Carefully layer crabs on rack; sprinkle each layer with Old Bay. Cover and steam 20 to 30 minutes depending on size of crabs or until crabs turn red.
Makes 4 servings, 3 crabs each.

well,if you like spicy food try chilly crab..
You can boil them, but steaming them will make them taste better as the flavor doesn't go into the water. Then make some dipping sauce( I personally like vinegar + thin ginger slices) and enjoy it.
This way you can have the original fine taste of crabs, but you have to make sure they are really fresh or they will taste bad.
Btw, the heavy-tasted fried crabs in restaurants are usually made from not-so-fresh crabs so they use all kinds of sauce/ingredients to cover it up.

next , you can do one of the following :
- boil them in hot water for about 15 mins.
- put them in a tray in a heated oven for about 20 mins.
you can always know they are cooked when their color changes and becomes reddish orange .

Well if they are already dead I might suggest that you start over, Lobster is suppose to be cook fresh, and unless you have properly cleaned and dressed them after they died I wouldn't eat them.
There are many way's to cook lobster, the main one is boiling and the reason for this is that it proves to have the best flavor.
If you want you can blanch them for about 12 minutes in boiling water then remove from the water, crack open the shell and remove the meat, on the rear portion of the lobster you will see a small dark red or brown like vien that runs from mid thorax to tail, using your thumb nail remove this, it's the lower intestine and crap. Rinse good.

Now in a 12 inch saute pan add 4 Tbsp real butter over a meduim heat, when buter is almost melted place lobster meat in pan. Saute for about 6 minutes on each side but watch not to start burning butter or meat, if this starts reduce heat. While cooking wash mushrooms, slice into thin pieces. and set aside.During the last 3 minutes of cooking add 1/2 Sherry & about 6ozs Mushrooms to pan, cover and reduce to simmer. Let simmer for about 15 minutes.
Now take 2Tbsp butter and 4Tbps Cream chesse and mix into a bowl, using the microwave on 40% warm it up until you can mix the butter intothe cream cheese throughly.
Remove the Lobster, place it on the plate (best over a Panini or Spaghetti noodle) Using a spoon with wholes pick up a bit of mushrooms, drian off and cover lobster then pour a tsp of butter/crmcheese over the lobster / mushroom and sprinkle with chives.
