How do you fry fish using cornmeal? And whats a tip for reducing the "fish smell" in your house?!
First I season the fish with hotsauce and seasoning salt.
In one dish I mix up flour and seasoning salt. In another a few eggs, salt and pepper. Finally the jiffy.
Then I coat in the flour, then into the egg and then in the cornmeal mix. Let this sit for about 10 minutes before you begin to fry in oil. I prefer peanut oil, but any vegetable oil would be fine. Pour in enough oil to cover 1/2 the depth of the fish in your pan. Depending on the thickness of your fish you only need about 5 minutes per side. Just let the fish get a little brown on each side. Let it sit again on paper towel for about 5 minutes before you serve.
I don't have a strong fish flavor when I make this. I don't like using air fresheners, but I do boil lemon rinds in water. You can do the same with vanilla extract, potpourri, etc. If you are serving fish I would suggest the lemon.
Answers: I don't use cornmeal, I use Jiffy cornmuffin mix. If you don't use this add equal parts of flour and cornmuffin mix with a tsp. of sugar.

In order to reduce the fish smell in your house, you need to soak the fish in milk for a few hours before you plan to use it.
To bread it, I typically dip both sides in a bowl of milk, then dip both sides into the corn meal. I put a moderate amount of olive oil into the bottom of a pan, then fry the breaded fish on a medium/high flame until the fish easily flakes apart.
To fry fish in cornmeal, dip a clean, dry fish in watered down egg white (1 egg beaten with a tablespoon of milk or water or beer), then when coated, lay in a bowl of cornmeal, turning to coat.
Hot oil fries faster than medium, but watch out for smoking (too hot) and splatters. To keep build-up of fishy smell from overwhelming the house, try opening windows in the kitchen and running a fan. Also, burning candles helps. OR, try boiling slices of citrus fruits in water on the stovetop. The scent refreshes the room.
I don't prefer frying fish dredged in cornmeal. The gritty thing throws me off. :) I'm sure there are some people on here that will give you great ideas.
As for odor...use the fan that is above your stove-top. It also doesn't hurt to keep a few windows open while you are cooking. I do this often, even in the winter. Lets fresh air in and stale yucky air out!
Mix corn meal with a little four, add a good shot of salt and pepper. Heat peanut or vegetable oil. Should be quite hot, but not smoking. I do not dip my fish in egg or milk. Just the meal-mixture.If deep frying, the fish will float to the top when done.
We usually cook our fish outside, weather permitting. No odors, no oil spatters to clean up!
