A cheesecake fanatic wants the ORIGINAL, creamy white cheesecake... it is SOOOO simple to make... first you need a special pan called a SPRING FORM PAN (the sides unhook and expand and the bottom drops out)... then get 5 packages (8oz each) of PHILLY cream cheese squares...any other cream chees square is OK but PHILLY will make your cheesecake smooth and VERY rich.. Ok then you need 2 capfuls (about a teaspoon) of vanilla extract, a 16 oz container of SOUR CREAM, a 1/2 box of VANILLA WAFFERS 1/8 of a pound of butter, 2 eggs and about a cup of plain white sugar..
mix ROOM TEMPERATURE cream cheese with the eggs, vanilla and sugar....
in another bowl, crush up vanilla waffers and ad melted butter, mix until blended and press with hand in the bottom of your spring-form pan.
spread the creamcheese/sugar/egg/vanilla mixture over the patted down crushed waffer crumbs and place in the middle of a 325 degree oven for 25 minutes... then increase heat to 350 degrees.... do NOT overcook or undercook the cheesecake... you must test it----LOOK at the top of the cake... about a half inch around the rim is a bit "shrivled" then it's done... the center will still be a BIT runny and a knife will show SOME cheesecake on it when inserted....(but not a lot)...turn off the oven and bring out the cheese cake and let it cool then REFRIGERATE for several hours before serving..... if you bring it to school, bring a bowl of APPLE PIE mix out of a can---warm up the apple pie mix and pour it on TOP of a piece of cheesecake... Oh goodness I want some RIGHT NOW!!!!!
