QUICK AND EASY RICE PUDDING

2 1/2 c. cooked rice
1 box vanilla pudding (the kind you cook)
1 c. raisins

Follow directions on box of pudding. Add HOT pudding to cooked rice and raisins. Put in bowl or oblong cake pan. Dust with cinnamon or nutmeg. Serve warm or cold.

The Classic Minute Rice Pudding

1-3/4 cups milk

1/2 cup MINUTE White Rice, uncooked

2 Tbsp. sugar

2 Tbsp. raisins

1/4 tsp. salt

1 egg

1/4 tsp. vanilla

COMBINE milk, rice, sugar, raisins and salt in medium saucepan. Bring to boil, stirring constantly. Reduce heat to medium-low; simmer 6 min., stirring occasionally.

BEAT egg and vanilla lightly in small bowl. Stir small amount of hot mixture into eggs. Stirring constantly, slowly pour egg mixture back into hot mixture. Stirring constantly, cook on low heat 1 min. until thickened. (Do not boil.)

REMOVE from heat. Let stand 30 min. Serve warm. Store any remaining pudding in refrigerator.


This has always worked well for me. I do like to add a little nutmeg before serving.

Easy Rice Pudding
2-3 cups leftover rice(already cooked)
2 cups 2% milk
3 tbsp cornstarch
1/2 cup sugar
1 tbsp vanilla
1 cup rum soaked raisins(optional)
1 tbsp butter melted
1 tsp cinnamon(optional)
Place all ingredients into pot and heat on medium heat stirring gently and watching until softened and thick.

DELICIOUS QUICK RICE PUDDING

1 c. cooked rice (leftover rice is easiest)
1/2 c. sugar
2 c. milk
1 tsp. vanilla
2 eggs, beaten
1/2 c. raisins

Combine ingredients and sprinkle with cinnamon. Bake at 350 degrees for about 45 minutes. 6 servings.

Old Fashioned Baked Rice Pudding

1/2 c. rice
2 qt. milk
1 c. sugar
1/2 tsp. salt
1/4 or 1/2 tsp. cinnamon
1 c. raisins (if you want)

Mix all into baking bowl, oven proof. Bake 325 degrees about 2 hours. Stir once in a while.

This is my ex-husband's favourite rice pudding. He didn't like raisins, so I left them out. I used 1/2 tsp cinnamon and also added 1/2 teaspoon vanilla extract.
