According to HACCP guidelines how long should raw shrimp be cooked at boiling temperature to ensure safety?!


Question: Obviously, frozen shrimp must be defrosted first.
The way to go about it is to hold it under a running tap of cold water for some minutes, but then one is never sure that the shrimps are actually all defrosted on the inside, so better then boil the shrimps in a pot of salted boiling water.
Put the shrimps in only when the water starts boiling, not before...
Boil for about four to five minutes. The internal temp should be 145 deg F.
Serve with some chilly sauce.

I must have missed something in class that day . If I was to "A" the "H" of shrimp I would've sworn that the "H" was in ingesting the contents of the digestive tract not in the flesh proper Report It

  • a lot depends on the size of the shrimp. are you using jumbo shrimp or popcorn size shrimp? In general cook until water returns to a boil, and internal temperature of the shrimp reaches 170 degrees F.

    Until the middle of the shrimp reaches 145 degrees Fahrenheit.
