Recipe for perfect grilled salmon?!
Answers: anyone know of a tried and true recipe, one that you have haad compliments on and use again and again?
Marinate the salmon in orangle juice for 2 hours up to overnight.
Remove from marinade and sprinkle both sides with salt, pepper, dry rosemary.
Grill skin side up for 3 minutes, turn to skin side and grill another 6 minutes til done.
********GRILLED TUNA SANTA FE
1/2 c. fresh lime juice
1/2 c. beer
4 tsp. cumin
1/2 tsp. salt
Fresh tuna/salmon fillets or steaks for each person
Sliced avocado, salsa (optional)
4 cloves garlic, minced
3 tbsp. oil
4 tsp. Dijon mustard
Combine lime juice, beer, oil, cumin, mustard, salt and garlic in a large shallow dish. Marinate for 2 hours, turning occasionally. Grill on preheated BBQ, approximately 5 minutes each side. Serve with salsa and a slice of avocado, if desired.

There are a couple of methods for cooking this amazing fish. One great way to ensure an evenly cooked result is to oven bake it in a salt bed. Fill a baking tray with maldon sea salt. Lay the fish on top and cover with salt. Splash a little water onto the salt. This will ensure that it peels away once cooked. Place the tray into a hot oven and cook for approx 20-30min depending how you like your fish. Once done and using a palate knife, peel the salt from the fish. This will remove the skin and reveal the beautifully cooked flesh.
As for stove top, i usually dry the fish with kitchen roll, and season well with maldon sea salt and pepper. Then simply place it in a hot pan and cook it on either side for approx 3-5min. Finish with a squeeze of lemon and finish it in the oven for a further 5-8min depending how you like your fish. The result is a naturally flavoured and perfectly cooked piece of salmon
I would NOT marinade fish overnight. Especially with orange juice. Fish is too delicate and the OJ breaks down the fish too much. Just lightly coat with olive oil, chop fresh dill and put on top of fish with slices of lemon. Broil. Very good.
