Can u steam a creme bruille to cook the rich custard or should it be only in the oven in a water bath?!


Question: Steaming is going to curdle the eggs. It needs to only be in the low oven in a water bath. Steaming is probably better than sitting it in a dry oven. I have made a creme brulee custard on the stove top, but it doesn't set up all the way, and I ended up using it to make an incredible vanilla ice cream instead. You could always try to steam it, and see what happens, but I think the heat is too intense. The creme brulee will probably cook quickly around the edges, and while you're waiting for the inside to cook, the outside will overcook.

In the restaurant I work at they put them in water and then in the oven. I'm a server & bartender, so my best guess is that since it is eggs, steaming really wouldn't "cook" the whole enchilada. It needs to be cooked "all the way around" .. So water, plus the heat from the oven does the trick.
Does that make sense? Hope it helps.
p.s. steaming might make it curdle because it's not hot enough to cook all the ingredients

i know from experience never steam you get scrambled eggs.always cook a creme brulee the correct way,water bath in the oven.
