Zucchini reciepe ???!


Question: My moms birthday is the 24 and she loves zucchini. Im not a fan. So i need a reciepe that is a good one, but one i dont need to taste lol.

You can prepare zucchini fritters, zucchini bread, zucchini pie, stuffed zucchini etc. but since it is your mum's special day, it is best to present her with a nice birthday cake. For this, I would recommend Zucchini Cake with Cream Cheese Topping. This dessert is similar to Carrot Cake. Below is the recipe:

ZUCCHINI CAKE WITH CREAM CHEESE TOPPING

2 cups sugar
1 cup salad oil
4 eggs
2 cups flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
3 tsp. vanilla
2 cups shredded unpeeled zucchini
1 cup chopped nuts (optional)

Mix together sugar and oil, add eggs, beat well. Add flour, soda, baking powder, cinnamon, salt and vanilla and beat until smooth. Bake at 350 degrees in a greased 11 x 16 inch jelly roll pan or sheet cake pan for 20 to 30 minutes. Cool and spread with topping.

TOPPING:
4 oz. cream cheese
1/2 c. butter
1 tsp. vanilla
2 c. powdered sugar
1 tsp. milk

zucchini bread, its so good. i don't like zucchini but i love zucchinni bread.

Zucchini Cornbread Casserole

INGREDIENTS
4 cups shredded zucchini
1 onion, chopped
2 eggs, beaten
1 (8.5 ounce) package dry corn muffin mix

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
In a large bowl mix together the zucchini, onion, eggs, muffin mix, salt and pepper. Stir in 4 ounces of the cheese. Spread this mixture into a greased 2 quart casserole dish; top with remaining 4 ounces of cheese.

MIX EVERYTHING TOGETHER PUT INTO THE ZUCCHINI SHELLS SPRINKLE WITH SHREDDED CHEESE AND BAKE IN OVEN FOR 20 MINUTES AT 350 DEGREES UNTIL CHEESE IS MELTED. MMMMM GOOD

I don't like zucchini, but I LOVE this recipe:
Summer Squash Recipe
2 lbs squash and/or zucchini, sliced
1 green bell pepper, seeds removed, sliced
2 smallish tomatoes or one large tomato, peeled and cut into wedges
1/2 yellow onion, peeled and sliced
1 clove of garlic, chopped
Olive oil
5 or 6 slices of cheese - jack or cheddar
Basil, either dry or chopped fresh
Salt and pepper

1 Put onion, garlic, squash, bell pepper into a large saucepan with a couple of tablespoons of olive oil. Put on high heat and brown the vegetables slightly to develop flavor. As you are browning, sprinkle either dried basil or chopped fresh basil on the vegetables. When vegetables are slightly browned, remove from heat, add the slices of cheese, and cover the pan.

2 In a separate stick-free fry pan, put the tomatoes and cook at medium hi heat for about 5 minutes, stirring occasionally. You want to let the juice from the tomatoes evaporate some. After 5 minutes, add the tomatoes to the rest of the vegetables and stir. Salt and pepper to taste.

Serves 4.

Im sorry I don't know if you wanted a sweet or savory recipe....so here is one of each

STUFFED ZUCCHINI

4-5 small zucchini
1/2 cup bread or cracker crumbs
1 tablespoon melted butter


Stuffing:

1/4 stick butter
1 tablespoon flour or cornstarch
1/4 cup sour cream
1/2 teaspoon dill
parsley and paprika (for sprinkling)
salt and pepper, to taste
zucchini pulp

Drop whole zucchini into boiling salted (about 2 tsps salt per 5-6 quart pot) water. Reduce heat and simmer for 15 minutes or until tender.
Drain; cover zucchini with cold water to stop the cooking. When cool, slice in half lengthwise; scoop out meat from centers leaving a hollow shell. Reserve zucchini pulp and set aside.

Mash zucchini pulp using a potato masher or a fork.


Stuffing:

In a small saucepan, melt 1/4 stick butter. Blend in the cornstarch until no lumps remain; add sour cream. Combine with dill and salt and zucchini pulp, mixing ingredients until well blended.
Fill the zucchini shells evenly with the stuffing.

Melt 1 tablespoon butter in microwave. Stir in 1/2 cup crushed cracker crumbs or bread crumbs, mixing until all are coated. Sprinkle a layer of buttered bread crumbs on top. Top with parsley flakes and a sprinkling of paprika for color.

Bake in a preheated 350F oven for 30 minutes.

Pizza Zucchini Variation: Spread a thin layer of pizza sauce on top before baking. Sprinkle top with Parmesan cheese (or shredded mozzarella) 10 minutes before baking is finished. Drizzle with olive oil infused with minced garlic, oregano, and basil before serving (omit dill and sour cream).


ZUCCHINI BROWNIES

1/2 cup butter
2 1/2 cups flour
1/2 cups cooking oil
1 3/4 cups sugar
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cups cocoa
2 cups zucchini (drained)

Preheat oven to 350F degrees.
Cream together butter, oil, and sugar. add eggs one at a time. Blend in vanilla and buttermilk. In another bowl, mix dry ingredients. Add to batter, mix thoroughly, add zucchini by hand until zucchini is mixed in well.

Spread in 11 x 16" pan.

Bake at 350 for 15-20 min.

Turn off oven- if more baking time is needed, leave brownies in oven for 5 more min.

Slice zucchini in round slices. Salt and pepper to taste, fry in olive oil, seasoned with garlic until slices are brown and just starting to soften. Put on paper towels to drain, arrange on plate with grated parmsean cheese. Enjoy
