Answers: Hi does any one have a way to make chicken n noddles the Amish way or another way that is great ? When it's cold out side or you got friends comeing over cause i am maken that an some mash p an corn an some corn bread.
I coat chicken in a mix of flour, corn starch, salt and white pepper.
Then brown it in a pot. I like to use the 6 quart le creuset for this.
Then I pull the chicken off to the side once its browned and put in chopped carrots, onions and celery, garlic and jalapeno. I have alot of jalapenos from my brothers garden so I put them in everything, I love them. After that comes together, I dump in a box of that swansons chicken broth, add a couple bay leaves and the reames egg noodles (from the freezer section at the store). Add the chicken back in and cook it until the chicken falls off the bone.
You can add a small can of peas towards the end.
I might have to make some of this over the weekend !!!!!
Amish Chicken Casserole
8 oz. noodles (your favorite size)
1/2 cup margarine
1/3 cup flour
1 cup milk
2 cups chicken broth
1 small can (about 3 oz) mushrooms
2 cups cooked and cubed chicken
2 tsp. salt (or slightly less to taste)
1/2 tsp. pepper
1/3 cup grated Parmesan cheese
Cook noodles according to package directions; drain.
Preheat oven to 350 F.
Melt margarine, then whisk in flour until smooth. Gradually add milk and broth (separately or can be mixed); then stir in seasonings and mushrooms.
Combine chicken, cooked noodles and prepared sauce.
Put in ungreased 9x13" baking pan and top with Parmesan cheese. Bake for 20 minutes.
This can be made ahead and heated when needed but will take slightly longer to heat completely through.
Optional: You can add whatever vegetables your family especially likes.

8 ounces noodles, cooked
2 cups cooked chickens, cubed
2 cups chicken broth (canned is ok)
1 cup milk
1 can mushrooms
2 teaspoons salt
1/2 teaspoon pepper
1/2 cup margarine
1/3 cup flour
1/3 cup grated parmesan cheese
1. Melt margarine, then add flour and stir until smooth.
2. Gradually add milk and broth, then seasonings and mushrooms.
3. Combine chicken, cooked noodles, and prepared sauce.
4. Place in an ungreased 9 x 13 inch baking pan and top with Parmesan cheese.
5. Bake at 350 for 35-45 minutes, or until heated thoroughly and top is browned slightly.
My favorite is more like chicken noodle soup but I put enough noodles in that it isn't really soup.
1 whole chicken or cut up chicken
(I usually add a couple extra leg quarters, it makes a better broth)
2tsp salt
2tsp pepper
8 bullion cubes
Combine above and add enough water to cover chicken an inch above in a Large stock pot.
Cook on high about 45-60 minutes
Take chicken out of pot to cool and add th following ingredients to broth, cook veggies medium to high 30 -45 minutes until almost tender.
1 large onion diced
1lb carrots peeled and sliced
1 bunch celery cleaned and diced
While veggies are cooking you can pick the chicken off the bone and set aside. When veggies are done you add 2 - 1lb packages wide amish noodles and let cook 20 minutes or so to your liking. Add chicken to the rest and heat thru.
