Why do you add noddles when the water starts to boil?!

Cooking noodles or spaghetti by starting in cold water releases the starch that is in the noodles into the water. By doing this the water will be cloudy and the noodles will be less firm. It is usually best to add pasta to boiling water not just hot, the pasta will be perfect then.

When making pasta, you put the pasta in the water when the water is boiling. Not before when the water is cool.

To my knowledge, there's really no difference. I throw in the noodles as soon as the pan hits the stove, and it works just fine.

If the pasta takes on too much water as it would if you put it in initially, it gets gummy (for lack of a better word).

Adding it when the water starts boiling allows you to time it properly. If you add it right away, it actually begins to cook a little as the water heats. You'll end up with mushy noodles!

the wate has to be boiling or the noodle messes up.

If you add the noodle initially, they would come out really nasty... overcooked...

the reason why you add them ONLY when the water boils is because of the "shock" they get: they cook better, but they also keep their taste better.

the pasta will stick together. the boiling movement helps keep it from sticking....as long as its in a large enough pot.
