Spicy Garlic Lime Chicken (READY IN 25 MINUTES)
INGREDIENTS
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/8 teaspoon paprika
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried parsley
4 boneless, skinless chicken breast halves
2 tablespoons butter
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice
DIRECTIONS
In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.

Chicken and Broccoli Alfredo
Ingredients:
1/2 pkg. linguine (8 oz.)*
1 cup fresh OR frozen broccoli flowerets
2 tbsp. butter
1 lb. skinless, boneless chicken breasts, cut into cubes
1 can (10 3/4 oz.) Campbell's? Condensed Cream of Mushroom Soup OR Campbell's? Condensed 98% Fat Free Cream of Mushroom Soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp. ground black pepper
Directions:
COOK linguine according to pkg. directions. Add broccoli for last 4 min. of cooking time. Drain.
HEAT butter in skillet. Cook chicken until browned, stirring often.
ADD soup, milk, cheese, black pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.
TIP: *Or substitute spaghetti for linguine.
Serve with a mixed green salad topped with grape tomatoes and balsamic vinaigrette. For dessert serve pear halves.
My easy dinner is beef noodle casserole.
1 lb. browned ground chuck
1 bag large egg noodles
1 large can cream of mushroom soup
4 tbs. margarine
Brown ground chuck, boil noodles. Add ground chuck with cooked egg noodles, add cream of mushroom soup and margarine. Simmer on low till warm, add salt to taste.
Serve with bread & butter or homemade rolls.
some mac n cheese, pound of lean ground beef and a chopped tomato. cook ground beef in pan and drain, and to mac n cheese w/ diced tomato and you made yourself a cheap hamburger helper.
CHICKEN SPAGHETTI!! You cut 4 chicken breasts into bite size cubes (boneless, skinless chicken breasts) and then boil them in a big pot until it's white and soft. At the same time boil some spaghetti noodles as the instructions read. While they're boiling get a can of cream of mushroom soup and cream of chicken soup (16 ounces) mix them together with 8 ounce of the Velveeta American cube cheese. Also, if you like tomatoes and onion you can add a cup of those in there as well. Make sure they're diced. Mushrooms and black olives are an option to throw in there as well. I really don't like them so I left them out. Once the noodles are finished boiling, drain them, & pour them into a large casserole dish, pour the soup mix & cheese over the top of the noodles (make sure the sauce soup mix was THOROUGHLY MIXED PROPERLY). After that place it into the oven for about 10-15 at 275 degrees or until you see that the cheese is melted and it's nice and creamy. After you take it out, drain the chicken and mix it in with the noodles and sauce. It tastes almost like fettucini alfredo, but a little better! It's awesome!
It's about 45 minutes all together...I'd say about 30 minutes to prepare and only the 15 minutes to cook it and blend it all together.
Easy Chicken Tortilla Soup
2 cans cream of mushroom soup
2 cans cream of chicken soup
2 cans chicken broth
2 cans Rotel tomatoes
2 cups milk, seasoned with garlic and chili powder
2 cans Tyson chicken chunks, undrained
4 to 6 flour tortillas, torn into 2" pieces
Mix all in a large pot and bring to a boil. Reduce heat and simmer for another 10 to 15 minutes, stirring occasionally. Serve over tortilla chips, and top with shredded cheese and sour cream. It makes quite a bit, so if you're only feeding 2, just half it. Enjoy!
EASY LASAGNA
1 lb. ground beef
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) Ricotta cheese
3 c. (15 oz.) shredded Mozzarella
1/2 c. grated Parmesan cheese
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
8 oz. lasagna, uncooked
Brown beef in 3-quart saucepan; drain off excess fat. Add sauce and water; simmer about 10 minutes. Combine remaining ingredients, except lasagna, for filling. Pour about 1 cup sauce on bottom of 9x13x2-inch baking pan.
Layer 3 pieces of uncooked lasagna over sauce; cover with about 1 1/2 cups sauce. Spread half of cheese filling over sauce. Repeat layers of lasagna, sauce and cheese filling. Top with layer of lasagna and remaining sauce. Cover with aluminum foil and bake at 350 degrees for 50-60 minutes. Remove foil; bake about 10 minutes longer. Allow to stand 10 minutes before cutting.
