Layered Fiesta Casserole

1 lb. extra lean ground beef
1 medium green pepper, chopped
1 medium red pepper, chopped
1 jar (16 oz.) Thick 'N Chunky Salsa
1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (10 oz.) frozen corn, thawed
12 corn tortillas (6 inch)
1-1/2 cups Sharp Cheddar Cheese, divided
PREHEAT oven to 375°F. Brown meat with peppers in large skillet; drain. Return meat mixture to skillet. Stir in salsa, tomatoes and corn; bring to boil.
SPOON 1 cup of the meat mixture onto bottom of 13x9-inch baking dish; top with 6 tortillas, overlapping as necessary. Spoon half of the remaining meat mixture over tortillas; sprinkle with half of the cheese. Top with the remaining 6 tortillas and remaining meat mixture. Cover with foil.
BAKE 25 to 30 min. or until heated through. Remove from oven; uncover. Sprinkle with remaining cheese. Let stand 5 min. or until cheese is melted.

I LOVE leftover spaghetti. While it's good the first time around, I think that storing it in the fridge and reheating in either the microwave or stovetop (in which case I add a little water) results in spaghetti that is even better, with the flavors nice and blended.

This is one that I always make ahead of time and it tastes even better then. Buy a barbequed chicken or if you want you can do it yourself. ( I prefer the barbequed one). Take all the skin off and flake the flesh into small pieces. In the meantime saute 1 large chopped onion in a bit of olove oil. Add some garlic and ginger to your taste and cook for a few minutes. Then you add 2 large diced carrots, 2 stalks of celery and lots of fresh green beans chopped into bite size. Cook all these together for a few minutes and then you add 1 tablespoon of curry and 1 teaspoon of tumeric, salt and pepper. Cook for about 5 minutes stirring now and then. Lastly you add 1 can of cream of chicken soup with 1 can of water. Let it cook for about 1/2 hour and serve it with cooked rice whenever you are ready. I even freeze mine in containers for those unexpected visitors. Enjoy !!

Take a glass pan for a large cake. Use a large bag of broccoli frozen, a can of cream of chicken coup condensed, a lg. sour cream, a box of stove top stuffing 9chicken or savory) and two cups chicken breast or cooked chicken of your choice (no bones). Thaw the broccoli in the microwave, drain and place on bottom of dish, place chicken pieces over that, mix chicken soup and sour cream together and put over that then use seasoning mix and melted butter as instructed on stuffing package, without the water. Mix together and then pour onto dish and pat down over entire top. Put into a 350 oven for about 20-30 minutes or until golden brown. This can be put in fridge and heated in microwave later. It is also great without the chicken. I eat it cold and my family always want it for holidays. It really is deliucious.

Shepherd's pie: Ground beef with onions topped with potato.
Lasagna: Layered noodles with tomato sauce & cheeses.
Tuna: Drained canned with celery/onion, in mushroom soup.
Chicken: Chicken pieces on kernal corn, milk flour & eggs.

PASTITSIO: 1 lb ground beef sauted with onion & spices,
add beef broth, tomato paste, boil stir & simmer 10 minutes.
Cook macaroni in salted water 10-12 minutes until tender.
Drain, transfer to large bowl, add 1 1/2 cups whole milk,
1/3 cup sour cream, heat then add 1/2 cup grated Parmasan.
Add macaroni, stir until coated, spread 1/2 in casserole.
Spread beef mixture on top, spread remainder on top.
Sprinkle 1/2 cup Parmesan over & bake in 325F oven.
About 1 hour, until heated through & cheese is golden.
