Sweet & Sour Meatballs

2 lb ground beef
3/4 tsp seasoned salt
1/4 tsp pepper
3/4 tsp garlic powder
1/2 tsp italian seasoning
2 tsp dry parsley flakes
1 tsp dry minced onion
2 eggs, beaten
1/2 c. instant rice

Preheat oven to 375 degrees. Line 1 or 2 rimmed cookie sheets with foil, spray with cooking spray & set aside.

Crumble meat into a large bowl. Gently mix in rest on ingredients until blended. Form into meatballs about the size of an olive (about 3/4 inch in diameter for cocktail meatballs) & lay on prepared pans. Bake 10 minutes. If necessary, drain on paper towels.

Sauce:

2 12 oz jars Heinz chili sauce
1/4 c. water
1/2 c. grape jelly

Pour chili sauce into crockpot. Add water to 1 jar, shake to remove sauce clinging on jar, pour into 2nd jar & repeat. Pour into crockpot & add jelly. Turn heat onto high & stir until jelly is melted (about 5 minutes). Reduce heat to low, add meatballs. Cover & cook 3 hours (or more but stir after 3 hours).

You should get about 75-100 cocktail meatballs.

I always partially bake the meatballs. This gets most of the fat out of the meat & keeps it out of the sauce. There are other brands of chili sauce on the shelves (near the ketchup) but I like the flavor of Heinz the best.

Sweet and Sour Meatballs Recipe

Ready in: 2-5 hrs

Ingredients:
1 can pineapple pieces
1/2 cup white vinegar
3 tablespoons soy sauce
1/2 cup Brown Sugar
5 pounds pre-cooked meat balls
Optional favorite vegetables

Place vegetable and then meatballs into pot. Mix other ingredients together and pour into Crock Pot.

Cover and cook for 5-6 hours on Low or 3-4 hours on High.

SWEET AND SOUR MEATBALLS

Batter Mixture:

2 eggs
3 tablespoons flour
salt and pepper

Meatballs and Sauce:

1 1/2 pounds ground beef
3/4 cup oil (for frying)
1 cup chicken bouillon
3 large green peppers, diced
1/2 large can pineapple chunks
1/2 cup Triple Sec or Cointreau
2 tablespoons cornstarch
2 tablespoons soy sauce
1 teaspoon Monosodium Glutamate
1/2 cup vinegar
1/2 cup pineapple juice
1/3 cup sugar
1/2 teaspoon salt
freshly ground black pepper

Shape ground beef into about 60 small meatballs.

Mix eggs, flour, salt and pepper together. Roll meatballs in batter mixture and fry in hot oil until nicely browned. Remove meatballs from skillet and set aside. Discard all but 1 1/2 Tbsp. of oil from skillet. Add bouillon, diced green pepper and pineapple chunks.

Cover skillet and cook at medium heat setting for 10 minutes. Combine remaining ingredients and add to skillet, stirring constantly until mixture comes to a boil and thickens.

Add meatballs and simmer for 15 minutes.

Season to taste and serve.

SWEET-N-SOUR MEATBALLS

MEATBALLS: (Microwave)
1 lb. meat loaf mix (ground beef & pork)
1/2 c. herb seasoned stuffing (or bread crumbs)
1/4 c. milk
2 tbsp. finely chopped onion
1 tsp. salt
1/2 tsp. Worcestershire sauce
1 egg
Healthy shakes of garlic salt, garlic powder, pepper, Parmesan cheese

Mix ingredients; form into small balls. Arrange in a single layer in a microproof baking dish. Cook on 90% power (saute) 5 to 6 minutes. Allow some fat to drain off when moving meatballs to crock pot.

SAUCE: (Stove-top)
1/2 c. packed brown sugar
1 tbsp. cornstarch
1 (13 1/4 oz.) can pineapple chunks
1/3 c. white vinegar
1 tbsp. soy sauce
1 sm. green pepper, coarsely chopped

In heavy syrup is better, in juice is fine.
Mix brown sugar and cornstarch in skillet. Stir in pineapple (with syrup), vinegar and soy sauce. Heat to boiling, stirring constantly; reduce heat. Simmer awhile. Pour over meatballs in crock pot. Add green pepper and stir.
