What is the best size and brand of springform pan to get to make cheesecake?!
A word of advice, don’t cheap out when it comes to buying bakeware – my last springform pan was a cheap no-name, and the coating on the side started peeling off after I’d only used it twice!
Edit to add: a water bath is when you put your springform pan inside a larger pan (usually a roasting pan) and fill it halfway up the sides with water. This helps when baking cheesecakes to keep the cake from cracking, since they have to bake so long. A recipe will tell you whether you have to do this or not.
Answers: I just bought a 10" Wilton – I haven’t tried it out yet, but it looks good and comes with a 10-year warranty. Plus, Wilton are like the gods of the cake world, so I assume they know what they are doing!

Kaiser or Cuisinart. 9 inch is fairly standard.
I'd like to say Nordic ware leak proof.
I saw some recommendations for Nordic Ware in the TV program America's Test Kitchen, and I've stuck to that ever since.

I have a Calphalon 9 inch springform pan and I love it.. I do use a non-stick spray "very little" and I've never had a problem.. If you are going to use a water bath it's a good idea to wrap the bottom of the pan in foil regardless of the type of pan you use.. good luck
Most brands, except super cheap ones, will work fine. The size depends on how much you want to make. Any size will be functional, they'll just make different size cheesecakes. I bought a set of three (Wilton, I think). It wasn't too expensive and it's worked great. I use the 9" most often, but I've used the others a few times, too. Also, you can use them to make a tall, fancy layered cake and impress all your friends!
