Bakers: Everything I bake in my muffin tin pan sticks. Help!!!?!


Question: I have a good quality muffin pan an I wash only by hand and use oil when I bake as not to damage the surface.
I just made some turnovers and stick, stick, stick..... I put them over some water to loosen up to get them out w/o remains being stuck on the bottom. Seemed to work.

Please, how do I prevent stuff from sticking.
I have lowered the heat, changed the time and adjusted the racks.

That's one reason I despise baking.........
Everything burns or sticks. And, my smoke alarm usually goes off. Didn't today. Surprising.
I have also used those baking cups but for turnovers, I don't think you need to, do you?

Help, please.

If things keep burning make sure to check your oven temperature with a oven thermometer to make sure things are cooking at the right temperature.

Pan Release, Better Than Pam Spray! (Professional Pan Coating) by KITTENCAL
1/2 cup corn oil or canola oil or vegetable oil
1/2 cup vegetable shortening, room temperature (Crisco shortening is good)
1/2 cup all-purpose flour

1. Place all ingredients in a mixing bowl.
2. Using an electric mixer beat until mixture has multiplied in volume, and resembles marshmallow cream.
3. Place in a storage container, and store on the counter, or in a cupboard.
4. In hot weather, it may be refrigerated, but remember to take it out of the fridge, as it should be room temperature for easiest spreadability.
5. Mix before using then brush pans gently with pastry brush or a clean paper towel.

For baking recipes using chocolate you may use 1/2 cup unsweetened cocoa powder in place of white flour

use pam cooking oil spray

dont use oil!! put a little shortening on a napkin (dont melt it 1st) and rub it on the surface (bottoms and sides) then lightly sprikle flour and be sure to turn upside down and hit bottom of it to get the excess off. i guarantee nothing will ever stick again!!

A bit of confusion here, why are you making turnovers in a muffin pan?

Muffins and cupcakes do not stick when made with paper liners.

could you use pam baking spray

Grease with butter, and then sprinkle with flour. Done and dusted.

I will assume you have a high quality pan like you said. Did you pan spray (Pam) on the top of the pan also in case the batter spilled over on it. The other thing it could be is your thermostat on the oven is out of calibration. You set it on 350 degrees but it is actually 450 degrees. You can but a oven thermometer for 3-4 dollars.Another option is that your muffin pan is made out light aluminum which lets heat in quicker and has a tendency to burn

i use a good quality cooking oil spray....and nothing ever sticks have you tried it?
