Pork Loin with a vein of fat across the middle.?!


Question: I recently found a very inexpensive pork loin that was purchased frozen. After thawing this pork loin I found a vein of fat that runs length wise on the loin and pretty much down the middle. When I cross cut the loin it falls apart at the fat vein. Any suggestion on how to cook this other than making pork medallions?

cook it in a slow cooker for 6 hours add veggies and cook till veggies are tender. will be great.

the fat will give great flavor maybe cook it covered at a low temp and serve it as pulled pork ....very good

Roast the pork and enjoy with some homemade applesauce.

The answer above is a good one. Don't worry about the fat; as it cooks it will melt away and keep the meat moist as long as you don't cook it too long.
Pork can now be cooked to 145o - 150oF on a meat thermometer, not extra well done to 185o! (The past dangers of Trichinosis are no longer valid!)
Then you can separate the fat from the jus!
