4 servings 25 min 10 min prep
Change to: servings US Metric
8 fluid ounces skim milk or low-fat soymilk
2 tablespoons plain flour
1 tablespoon butter
1 bunch scallions, thickly sliced
1 can salmon or tuna, drained and flaked
salt and pepper, to taste
2-3 slices French bread
1 tablespoon finely grated cheddar cheese or parmesan cheese

Put the milk, flour and butter into a small saucepan and whisk well.
Cook, stirring (with the whisk) continuously until the sauce comes to the boil and thickens.
Stir in the onions, fish and seasoning to taste.
Spoon the mixture into a warm shallow flameproof dish.
Arrange the bread on top and scatter the cheese over the top.
Place under a hot grill until the cheese is bubbling and the bread is golden brown, about 10 minutes.

This was fast, economical,and easy to fix - and tasted quite good on a cold fall day for lunch. My young daughter took two helpings and declared it as "wonderful!" Anything that gets that kind of reaction out of my sometimes picky eater gets a 5 stars from me!

I think this dish is called (fish morny) first boil some fish,then boil some potatoes,place the cooked fish in a Pyrex dish then cover with mashed potatoes then cover well with grated cheese,then place in the oven gas mark 6 cook for about 15 minutes.

Cook 8 - 10 ozs Cod or Ling in milk for 5 minutes in pan over medium heat. Flake fish into casserole dish.
Slice 2 hard boiled eggs ( boiled for 8 minutes) and sliced tomatoes.
Cover in white sauce.
1 oz butter melted, add 1oz four to make roux. Cook for 1 minute. add 8oz milk and cook.
Alternatively, make up 1/2 pint instant white sauce.
Cover with mashed potato.
Boil potatoes for 20 minutes. mash and cream with 1 tablespoon milk and 1 oz butter.
Alternatively, make up instant Mash. Dot with butter and place under grill until golden brown
