Superb Sausage Casserole
Ingredients
6 links pork sausage
1 large red bell pepper, chopped
1 large orange bell pepper, chopped
1 large yellow bell pepper, chopped
1 large onion, diced
1/2 cup ketchup
3/4 cup hot water
salt and pepper to taste
Method
In a large skillet, brown sausage on medium heat. Remove from heat and cut into thirds.
In a 2-quart casserole dish, combine the sausages, red bell pepper, orange bell pepper, yellow bell pepper, onion, ketchup and hot water. Mix together until well combined, and season with salt and ground black pepper.
Bake at 350 degrees F (175 degrees C) for 1 hour, stirring every 15 minutes.

Somerset sausage and potato casserole
Ingredients
15ml/1 tblsp vegetable oil
8 large Cumberland sausages
2 sticks celery, chopped
1 leek, sliced
1 large waxy potato, peeled and cut into chunks
1 onion, chopped
15ml/1 tblsp plain flour
300ml/ 1/2 pint Somerset dry cider
1 red skinned eating apple, quartered and chopped
salt and freshly ground pepper
Method
1. Heat the oil and fry the sausages for 5 minutes.
2. Using a slotted spoon transfer the sausages to a casserole dish.
3. Add the celery, onion, leek and potato to the oil and fry for 5 minutes.
4. Stir in the flour and continue to cook for 1 minute.
5. Gradually add the cider then pour over the sausages with the apple. Season to taste.
6. Cover and cook for 50 minutes.
7. Serve on apple mash.

BAKED SAUSAGE, CHEESE, AND EGG
CASSEROLE
1 doz. eggs
12 tbsp. water
1/3 c. low fat milk
1 lb. bulk sausage meat
6 oz. grated, sharp Cheddar cheese
Spray Pyrex oblong pan with Pam. Brown sausage in fry pan. Break sausage up into small pieces. Drain sausage of all fat. Spread sausage in bottom of pan. Beat eggs in large bowl. Add water and milk. Grate cheese and put over sausage. Pour eggs over cheese and sausage. Bake at 350 degrees for 1/2 hour Done when eggs are firmly set.
Can be made the day before and refrigerated overnight. Good for breakfast or brunch. Enjoy!
BROCCOLI - SAUSAGE CASSEROLE
1 lb. bag broccoli cuts
3 lbs. potatoes
1 lb. sausage
1 (8 oz.) sour cream
1 (8 oz.) jar Cheese Whiz
1/2 c. milk
2 tbsp. minced dried onion
Garlic powder
Pre-cook broccoli and potatoes. Combine ingredients and place in greased 9 x 13 inch pan. Bake at 350 degrees for 1 hour.
TOPPING:
3/4 c. bread crumbs
1/4 c. Parmesan cheese
1 tbsp. parsley
1/2 tsp. paprika
1 tbsp. butter
Mix and put on 10 minutes before casserole is removed from oven.
POTATO-SAUSAGE-CABBAGE CASSEROLE
Potatoes
Cabbage

Cream of mushroom soup
Salt
Pepper
Ingredients may be used in varying amounts, according to personal preference.
Slice potatoes thin, scalloped style. Par-boil potatoes and cabbage. Brown sausage. In a casserole or crock pot, layer sausage, cabbage, potatoes and cream of mushroom soup. Season each layer with salt and pepper to taste. Bake at 325 degrees for 45 minutes or bake in crock pot for at least 2 hours until sausage is done thoroughly and potatoes are tender.
