Sorry this is such a large recipe, but i'm Italian and we always cook more than we think we need. It is easily reduced by half. I usually make my own sauce with it, but for quick cooking you can easily use a good jar of sauce. Good luck!!


Stuffed Shells
20 large pasta shells
1 cup ricotta cheese
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
1 egg
2 garlic cloves, minced
1 tablespoon parsley
1 jar spaghetti sauce

Cook shells according to box. Lay out on wax paper to cool.
Place ricotta, mozzarella, parmesan, egg, garlic and parsley in a bowl. Mix until well combined.

Preheat oven to 375.

In a 9X13 inch (preferrably glass) dish, place a thin layer of sauce.

Spoon cheese mixture into the shells, and place one by one into the pan. Pour sauce over shells.

Make sure everything is covered with sauce. If using a glass dish, check the sides to make sure there is sauce between the shells and the dish. If the shells are sticking out they will get dried out and hard.

Sprinkle mozzarella and parmesan on top.

Bake uncovered for 30 minutes or until sauce is bubbling.
Take out of oven. This will need to cool at 15-20 minutes.

Eggplant or chicken parmigiana

You can always try a white spinach lasagna; instead of tomato based sauce, you can use an alfredo sauce-no meat, but use spinach instead

You can make ravioli with a butternut squash or mushroom filling

Fried or baked polenta is also a popular Northern Italian side dish. It's made of corn meal. You can find is readily prepared in the Italian aisle at the grocery store. It comes in a tube-spread just a bit of sauce over the slices and sprinkle with a bit of cheese.

Freshly prepared risotto is also popular, and I am NOT referring to Rice-A-Roni!

Fresh shrimp can be made into a shrimp scampi with a lot of garlic, white white, lemon, butter/oil. Serve over pasta.

Bowtie pasta, alfredo sauce, thin sliced chicken breast, artichoke hearts, pine nuts, sun-dried tomatoes, onions, garlic, basil, oregano, cayenne pepper, olive oil, balsamic vinegar.

Cook the chicken in olive oil over medium heat, add the other ingredients (except for the pasta). Use spices to taste, go light on the cayenne. Simmer over low heat for at least 5 minutes with the alfredo sauce. While the chicken mixture is simmering, cook the pasta. When the pasta is done put it all together. For an added treat get some French bread, in a small saucer pour enough olive oil to cover the bottom of the saucer, sprinkle with some balsamic vinegar, then top with a sprinkle of basil and garlic powder. Use this saucer mix to dip the bread in as you are eating the Bowtie Pasta.

Contrary to common opinion outside of Italy, Italian food does not consist mainly of starchy ingredients. Pasta, risotto, soups are just starters and no respectable Italian family will ever make a meal of pasta or risotto. The main dish is always either meat or fish accompanied by vegetables or salads (or both). Usually a meal will end with either dessert or,on an every day basis, with fruit and sometimes cheese. Wine is usually drank with every meal and if guests are present, there will be different wine for each dish.
There is no such thing as Italian food. It would be more correct to speak of Italian regional food, since every region in Italy has its own distinctive recipes which widely differ from North to South.

I think I'm going to make some meatballs this weekend. I get a roll of that bob evans italian sausage, some ground beef, mix them up, add an egg, chopped onion, garlic, fresh herbs like thyme, basil and oregano, good parmesan cheese, and I cook them in ragu sauce for 1.5 hours, its excellent.

stuffed mushrooms with shrimp and crabmeat, I saute carrots, onions, celery, garlic, fresh herbs thyme, oregano and basil in olive oil, then add to shrimp and crabmeat, an egg, parmesan and sometimes fresh buffalo mozzarella, then I stuff in porta bella mushrooms or tomatos or zuccini

Cut a pork tenderloin so it lays flat. The put some chopped egg, fresh basil, spinach, feta or buffalo mozzarella cheese, and roll it back up and tie it with a string and bake it until 160-170F. Will look something like this: (note the stuffed mushrooms on the plate also)

Linguine With Orange Sauce

Scallop Preparation:
3 T extra virgin olive oil
1 1/2 T Butter Buds or real butter
25-30 Bay Scallops or about 8 large sea scallops, quartered

Pasta Sauce Ingredients:
1/2 Cup finely minced onions or shallots

2 T red jalapeno peppers, minced (These are sold in many super markets in bottled form. You can use regular fresh jalapeno if you can't get these, seeded and minced. Use plastic or latex gloves to mince the peppers, or wash your hands well immediately after handling. If you have ever touched your eye after handling hot peppers, you will know from whence we speak!)

1/2 white wine, dry (Chard., Sauvignon Blanc, Pinot Gris, etc.)

1 cup fresh orange juice or 3 T frozen concentrate. (We keep a can of frozen OJ concentrate open in the freezer all the time to use in recipes, covered in a plastic freezer bag. Hint: Remove it from the can [tin rim] and put it in a plastic container. You can also do this freezer thing with other juices such as lime, lemon, etc. Then, you'll always have these ingredients on hand in this case, and that does cut down on extra trips to the market!)

1 cup whipping cream or non fat half and half or evaporated skim milk. Use plain yogurt or low fat sour cream for variety.

1/4 cup red or green bell pepper, minced

3 cloves finely sliced garlic

16 ounces cooked and drained linguine or angel hair pasta

Minced fresh Italian Parsley for final garnish.


Preparation:
Heat 2 T olive oil over medium heat. Just before adding scallops, add the Butter Buds or butter.

Remove from heat after scallops become pale but not cooked through, about 3-4 minutes.

Sauce:
Heat 1 T olive oil over medium heat.

Add onions, bell pepper, garlic and jalapenos. Sauté for about 6 minutes

Add the wine and reduce by half.

Add the orange juice and let simmer for 2 minutes.

Add the cream or non-fat cream and scallops with all of their remaining juices, and let the sauce reduce for about 10 minutes.

Add the pasta and combine with the sauce. Remove from heat.

Garnish with minced fresh Italian parsley

Make some raviolis with meat balls.

What you need:
Bag of cheese ravioli
Bag of pre-cooked meat balls
Jar of marinara sauce
Bag of shredded Mozzerella Cheese or favorite cheese

Cook Ravioli and then add meat balls and sauce into a pan.
Put cheese on top
Put in oven on 400 degrees for 20 mins or until cheese and food is heated through.

tagliatelle al prociutto: 150 gr ham,100 gr butter,few salt,50 gr parmigiano cheese,400 gr italian noodles (tagliatelle)

ransom some slices of ham,put in a frying pan the butter with the ham and melt the butter. cook pasta and when will be cooked add it in the frying pan and mix well. also add the cheese and black pepper and salt and mix slowly for 5 minutes. serve it hot

maccheroni ai salumi misti
50 gr ham,50 gr bacon,80 gr salami,3 spoon of oil,basil.400 gr macaronies,parmigiano cheese

ransom small cubes of ham,bacon and salami,brown them in a frying pan with oil and thyme for any minutes. when pasta will be cooked add it in the frying pan and add also the parmigiano cheese and mix it for any minutes. serve it hot


maccheroni alla mozzarella
120 gr mozzarella,35 gr margarine,20 gr white flour,300 gr milk,salt 400 gr macaronies

ransom small cubes of mozzarella. melt the margarine in a frying pan and add mixing the flour and pour slowly the cold milk. mixing boil the sauce for any minutes. when pasta will be cooked pour it on the mozzarella and add the sauce,mixing well and serve it.
