If you're ever in the mood for pizza this is something we make a lot in our house that is healthier - whole wheat pita (for the crust), pizza sauce, and 2% mozzerella cheese, topped with vegetables or lean meat of your choice - bell peppers, onions, even broccoli works. It always satisfies our craving without getting the greasy stuff delivered.

Turkey sandwiches or wraps are always good, with a slice of cheese, cucumbers, and mustard.

Always use whole wheat anything - pasta, bread, etc. We make spaghetti with whole wheat and lean meat, and we eat whole wheat tortillas - great for tacos and easy to make, just brown extra lean ground beef or turkey meat, add lots of vegetables as toppings, and again 2% cheese.

For breakfast I'm a fan of potatoes and eggs - use egg whites, and try sweet potatoes instead of regular white potatoes. Use olive oil to sautee it all together, and again add vegetables....squash is good here, or zucchini.

Breakfast I also enjoy - oatmeal, but not the little flavored packet kinds (they tend to have too much sugar). I take regular old fashion Quaker Oats, make that with skim milk, then add a tablespoon of peanut butter, and sweeten it with a little bit of honey. You can add bananas to it for some potassium too. Very very quick.

Whole wheat pancakes with frozen fruit - or even regular pancake mix with fruit. You can even use baby food (the ones in the cans) if you don't like lumpy fruit in the mix.

Quick snack idea - get triscuits, and 2% cheese, and top with turkey meat or lean ham meat...and add a drop of mustard.

Yogurt with granola is good - Kashi makes a great granola mix that you can eat alone or with yogurt.

Easy to make fish - catfish or salmon...just bake it with seasonings and no white creams. Top it with olive oil and pepper.

Basically...take anything you could eat on a normal day and make the carb whole wheat, and then try to stuff extra vegetables or fruit into it

Blanched snow peas, endive leaves, and asparagus with hummus are good too
Grilled or broiled fish with olive oil and lemon, with a side of wild rice
Spicy black bean soup
Butternut squash soup
....
There are so many options!

Oh! Grilled pears and peaches are nice - put a dollop of vanilla yogurt on top! Yum!
Or do fresh berries, granola and yogurt together - make a nice light dessert.
Fish tacos
Grilled chicken and pineapple skewers
Veggie pizza or fresh tomato and basil pizza
....
I could probably go on for an hour or so! lol! I hope these help!

Oatmeal
Homemade dressing (lemon juice, olive oil, garlic, salt)
Grilled veggies with basil pesto (eggplant, zucchini, multi-colored peppers, portabellas, etc. (chicken))
Egg white omelet
Stir Fry (soy sauce, honey, fresh garlic, fresh ginger, toasted sesame oil (just a drop or 2) and whatever veggies you like)
Veggie or Chicken Fajitas
w/ fresh salsa ~
1/2 red bell pepper chopped
1/2 green bell pepper chopped
1/2 orange bell pepper chopped
1/2 yellow bell pepper chopped
5 vine ripe tomatoes seeded and chopped
1/2 c. chopped vidalia onion
3 cloves minced garlic
1 lime juiced
1 lemon juiced
1/2 jalapeno finely chopped
1 1/2 Tbls. fresh chopped cilantro
Salt and pepper to taste

Mix all ingredients together and refrigerate at least an hour before serving. (I could eat this alone)

Breakfast
Cinnamon Couscous Cereal
4 oz Couscous
1 tbsp Dark brown sugar
1/4 tsp cinnamon
3 tb plain nonfat yogurt
Directions:
In a small sauce pan bring 3/4 cup water to a boil, strir in couscous, sugar, and cinnamon. Remove from heat. Stir in yogurt. Cover and let stand for 5 minutes. Fluff with a fork. divide evenly in four bowls




Lunch
Cool Tuna Casserole:
Here's a refreshing pasta dish you can make in advance and seal in single-serving containers. Mix one can of water-packed tuna with about three cups of cooked macaroni. Add a cup of vegetables -- corn or peas, or chopped carrots, celery, or tomatoes -- and gently toss with a little low-fat salad dressing.

Tuna melt with Carrot Raisin Salad


Snacks

Fruit Granola:
4 c Rolled oats
1 3/4 c Rolled wheat flakes
1 c Sunflower seed
1 c Chopped nuts
1/3 c Toasted sesame seed
1/3 c Sunflower oil
1/4 c Honey
1/2 c Raisin
1/2 c Chopped dried apricot
1/2 c Chopped dried peach
1/2 c Chopped dried apple

Preheat oven to 400 deg. Blend oats, wheat flakes, sunflower seed, nuts
(almonds, walnuts, pecans or combination), sesame seed, oil and honey in
large bowl. Transfer to large roasting pan, spreading evenly. Bake until
lightly browned at edges, stirring occasionally, about 15 minutes. Let cool
completely. Stir in fruit. Store in airtight container.

Dinner
Chicken and stir fry


Stir-Fried Scallops with Lychees
1 pound(s) sea scallops
1 pound(s) mushrooms
1/4 pound(s) snap peas, substitute Chinese pea pods
2 large onions
1 large yellow or orange pepper
1 piece(s) (2-inch by 1-inch by 1-inch) gingerroot, peeled
3 tablespoon(s) salad oil
3/4 teaspoon(s) salt
1 can(s) (16-ounce ) lychees, drained
2 tablespoon(s) bottled oyster sauce
1 tablespoon(s) dry sherry

Rinse scallops with running cold water to remove sand from crevices; pat dry with paper towels. Cut each scallop horizontally in half, if they are large. Cut each mushroom into quarters; remove stem and strings along both edges of each snap pea. Slice each onion into 6 wedges; cut yellow or orange pepper into strips. Cut gingerroot lengthwise into paper-thin slices; cut slices lengthwise into very thin strips.
In nonstick 12-inch skillet over medium-high heat, in 1 tablespoon hot salad oil, cook onions until golden brown, about 5 minutes. Add pepper strips, snap peas, and 1/4 teaspoon salt; continue cooking until vegetables are tender-crisp, stirring frequently. Remove onion mixture to bowl.
In same skillet, in 1 tablespoon additional hot salad oil, cook mushrooms, gingerroot strips, and 1/4 teaspoon salt until mushrooms are tender, stirring often, about 10 minutes. Remove mushroom mixture to bowl with onion mixture.
In same skillet over medium-high heat, in 1 tablespoon additional hot salad oil, cook scallops and 1/4 teaspoon salt until scallops are lightly browned, about 2 minutes. Return vegetables to skillet; add drained lychees.
In cup, mix oyster sauce and sherry; pour oyster-sauce mixture into skillet with scallop mixture; heat through.

STIR FRY

I love making a quick sir fry....yesterday I chopped up yellow squash, zuch, asparagus, green onions, green peppers,,and cooked them down,,,,once they were tender,,,,I added a handful of peeled shrimp....what I love about a stir fry, is you can use your own favorite veggies and meat......you can chop the veggies ahead of time and put them in baggies....Just spend one evening, chopping up various veggies and bagging them....then you are just minutes away from a good, healthy meal....I use the stir fry oil,,,,,to cook in,,,,and add a little soy sauce..always good...you can serve this with rice if you want, but you don't need it...
CHILLI LIME CHICKEN
Sprinkle some chili powder and lime juice on a chicken breast...broil till done

SLICED TURKEY AND CHEESE SANDWICH
Put Turkey on bread slice that has a little mayo on it....add some type of smokey cheese on top...stick under broiler till brown.

SAUSAGE AND RED BEANS
Fry up some low fat sausage in a pan with some chopped onion....add a can of red beans,,,,Beans are good for you.

CORN AND BLACK BEAN SALAD
Corn and black beans on arugula, add tomatoes and cucumbers, sprinkle with basil oil .

GREEN PEA SALAD
Use the green peas in the silver can,,,drain,,add some chopped up fresh tomato,,,,some chopped green onions,,and lot fat mayo.....amounts don't matter here,,just ever how much you like..
TOMATO SOUP AND GRILLED CHEESE
Tomato soup with a grilled cheese sandwich..use whole wheat bread and low fat cheese.

CHILLI...
Use ground meat has been well drained. Add a can of tomato sauce and a can of red beans...some chillie powder and cumin.....simple but good...Use TVP if you don't want to use ground meat...or use tofu...

BREAKFAST
You can't beat whole wheat cereal,,,oatmeal....or scrambled eggs....I also smear peanut butter on whole wheat toast...not too much...good with a glass of nice cold milk

DESSERT
I like to use fresh fruit when I can get it...I am lazy so I buy it already chopped up.....usually watermelon, cantalope, pineapple, grapes, blueberries,,,mix.....that is what my little grocery store has on hand....

PEAR SALAD
Take a canned pear..canned in it's own juice...drain and set on a lettuce leaf....add a dollop of low fat mayo to center,,,,sprinkle with low fat cheddar cheese, that has been shredded....my DH likes this one..

APPLE SALAD
Chop an apple,,,add some raisins, some walnuts and mayo....I think this is called Waldolf salad..

CARROT AND RAISIN SALAD
Shredded carrots,,,raisins,,,,,lowfat mayo

A lot of times, dessert is just a cup of coffee with one of the great flavorings they have....like dutch chocolate,,,chocolate hazelnut....you can get it in coffee creamers. Not a lot of calories, but you feel like you had a dessert.
