Make shrimp kabobs

Buy small skewers and put a cleaned, peeled shrimp, pineapple, green pepper or onion on each, spray with Pam, grill or bake, serve with Saucy Susan as dipping sauce or just plain. If plain, plate and squirt a little lemon over them.

p.s. if you don't want any party mis-haps, go with plain and a squirt of lemon juice on them.

Grilled pineapple is delicious and gets very sweet, so the combo is good. You could also add some cajun spices on the kabobs for those that like hot stuff!

Super Duper Shrimp Appetizers

Ingredients:
4.5oz can small Shrimp
Two 3oz packages Cream Cheese, softened
1 1/2 tsp mustard
1 Tbsp Onion, grated
1 Tbsp Lemon Juice
dash Cayenne Pepper
dash of Salt
2/3 cup Chopped Nuts




Directions:
Blend cream cheese, mustard, onion, lemon juice, salt and pepper. Rinse shrimp and drain thoroughly. Break shrimp into pieces and stir into cheese mixture. Chill thoroughly. Form into 1/2 inch balls and roll in chopped nuts just prior to serving. Makes 3 dozen yummy shrimp appetizers

PINEAPPLE SHRIMP APPETIZERS

Low Cholesterol. Makes 30 appetizers.

1 can (8 oz.) Dole Crushed Pineapple, drained
1 can (4 1/4 oz.) Pacific shrimp, drained
1/4 c. reduced calorie mayonnaise
1 tbsp. minced green onion
2 tsp. Dijon-style mustard
1/2 tsp. dill weed
2 cucumbers

Combine all ingredients except cucumbers. Cut cucumbers in 1/8 to 1/4 inch thick slices. Spoon heaping teaspoon of pineapple mixture on top of each slice. Garnish with dill or minced green onion if desired.

Variation: Omit mustard and dill weed. Add 2 teaspoons minced cilantro and dash of cayenne pepper.


EASY SHRIMP APPETIZERS

1 tub soft cream cheese
1 bottle seafood cocktail sauce
1 can tiny cocktail shrimp
1 box Ritz crackers

Spread each cracker with cream cheese. Next, spread a layer of seafood cocktail sauce over the cream cheese. Top each cracker with 2 or 3 shrimp. Delicious.

An easy and attractive shortcut to fixing each cracker individually is to layer the cream cheese, sauce and shrimp directly onto an attractive serving tray (a round tray is best) and stand up the crackers around the edges. The cream cheese will hold them in place and guests can spread their own crackers.

Coconut shrimp are so easy!

Toss some shrimp in flour. Then dip them in beaten egg. You'll need to make a mix of coconut and plain bread crumbs. You want it to be mostly coconut, and just enough bread crumbs to hold it together. Roll the shrimp in the mixture. Then just drop them in hot oil. It only takes a few minutes to fry them up.

Shrimp and Avocado Cocktail

1 pound medium OR large cooked shrimp, peeled and deveined, tails removed
1 (12-ounce) jar seafood cocktail sauce
1 avocado, peeled, pitted and cubed
1/2 small red onion, chopped
1/4 cup fresh cilantro, chopped
1/2 teaspoon optional hot pepper sauce
1/4 teaspoon ground black pepper
8 lime wedges
Tortilla chips, or assorted crackers

1. Combine shrimp, cocktail sauce, avocado, onion, cilantro, hot pepper sauce and pepper in medium bowl. Divide into 8 appetizer portions; serve with lime wedges and chips or crackers.

Makes 8 appetizer servings.

Spread softened cream cheese on a pretty plate. Pour a bottle of shrimp cocktail sauce over the cream cheese. Arrange small to medium precooked tail off shrimp. Serve with crackers. It's an old standby but really good.
