Are you talking about using chocolate that needs to be tempered? If so, this takes experience. If you're talking about just the little Wilton type molds, then you can always use their 'chocolate', though it's not real chocolate, or you could consider buying the chocolate that's used to make bark. Publix sells it down the cake aisle and if yours doesn't sell it year round, then they should definitely sell it for the holiday season. My son used to use the bark chocolate a lot when he made chocolate covered pretzels that he sold in school. Another option is to use the chocolate that's used in chocolate fountains. What you basically would do is coat the outer part of the mold and let the excess drip off. Let set. Add your filling, then finish by filling in with more chocolate. Remove from mold when set. My son also used molds and instead of using cream filling, he used extracts like peppermint, raspberry, butter rum, etc. You can buy them at cake decorating supply stores. Wilton ones are okay, but they are immitation flavored. The ones I mentioned are a much better quality. It's fun working with chocolate (I used to help my son), so have a great time creating your pieces.
