6 slices white bread
butter or margarine
1 pound ground pork sausage
1-1/2 cups (6 ounces) shredded Longhorn cheese (a mild type of Cheddar)
6 large eggs, lightly beaten
2 cups half-and-half
1/2 teaspoon salt

Trim crust from bread slices; reserve crusts for another use. Spread butter over 1 side of each bread slice. Place bread slices, buttered side up, in bottom of a lightly greased 13x9x2" baking dish. Set aside.

Brown sausage in a large skillet, stirring until it crumbles; drain. Spoon sausage over bread; sprinkle with cheese. Combine eggs, half-and-half, and salt; pour over cheese. Cover and chill 8 hours or overnight.

Remove from refrigerator; let stand, covered, 15 minutes. Uncover and bake at 350°F for 45 minutes of until golden. Yield: 8 servings.

In a baking dish 1st pour salsa, then add scrambled eggs, cheese, bacon, any other ingredient the kids like....peppers onions etc. Bake at 350 degrees for about 30 minutes.

i make this for my assisted living clients...1 cup of brown sugar 2 tbsp light corn syrup 1 stick of butter melted heat these up in a pan until butter is melted pour onto the bottom of a cassarole pan then put 2 layers of english muffin bread beat up about 8 eggs and 1 cup of half and half add some cinnimon and pour over the top. leave it in the fridge overnight and bake in the morning french toast strata it is fantastic

In a large baking dish, sprayed with non-stick spray combine crumbled sausage (uncooked) Eggs (beaten, shredded has brown's (frozen/thawed), grated cheddar or sharp cheese, onion (chopped) and green pepper (chopped) if you like. Salt and pepper to taste and mix well. Bake @ 350 degrees for about 30 - 40 minutes or so. With a lb. of sausage and a bag of hash brown's I would use 6 - 8 eggs beaten, 1 onion and green pepper.


You can add to it other ingredients if you like or take out. But bottom line is it cooks up great in the oven and taste great. Serve it with a Waldorf Salad (Chopped apples, green and red grapes, walnuts and raisins mixed with a little bit of mayo and a dsah or two of lemon juice) and biscuits.


One dish and it turns out great every time!

BREAKFAST CASSEROLE

9 eggs
1 lbs hot ground sausage
1 small cans green chiles
shredded cheddar cheese

Spray 9x13 pan with non-stick spray. Brown sausage with green chiles. Drain.

Scramble, in a bowl, all 9 eggs. Pour a little more than half the eggs into the cake pan. Layer sausage on the eggs. Layer as much cheese as you want on top of the sausage. Pour the rest of the eggs over the top.

Bake at 350F degrees until the top is brown and the eggs are cooked.


It's great re-heated!!!! Enjoy!

Just like most other things, just assemble the ingredients you like, and it will be great! How about this:

slice pre-baked potatoes, line a carrerole dish, top with diced ham or cooked bacon and colby-jack cheese, pour raw scrambled eggs over hte whole thing, and bake in the oven until set. I think that sounds awesome!

Or...you can line a pan with thick cut italian bread, and pour french toast batter over the top (beaten eggs, sugar, cinnamon, milk), let that sit overnight, bake for 40 minutes--that's also great!

Get a bag of frozen hashbrowns(or hasbrown o'briens if you think they will like peppers and onions). Put that on the bottom of the 9x13 casserole dish. Cook 4 - 6 sausage patties (or buy the pre cooked ones). Cool sauage. Crumble cooked sausage over hasbrowns. Sprinke 1 1/2 cups of shredded cheddar cheese over sausage. Mix 8 eggs with 1 cup milk. Season with salt and pepper.Pour egg mixture over the items in the casserole. Bake at 350 for about 25 minutes. sprinkle top with 1/2 cup shredded cheddar and bake for another 10-15 minutes until eggs are set and cheese is melted.

This casserole is amazing. And while you can't taste the green chili's, you may not want to add them if you think the girls may not enjoy it!

John Wayne Casserole, Serves 6

Ingredients:
4 oz chopped green chilies
1 cup grated jack cheese
1 cup grated cheddar cheese
4 eggs, separated
2/3 cup evaporated milk
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper


Steps:

1. Preheat oven to 350°.
2. Combine cheeses and chilies. Place in a buttered 12x8x2-inch casserole dish.
3. Beat egg whites until fluffy. Combine egg yolks, milk, flour, salt and pepper. Fold whites into yolk mixture. Pour egg mixture over cheese and mix slightly.
4. Bake for 1 hour, until knife comes out clean.
5. Options: chop onion, green bell pepper, and red bell pepper, sauté lightly in olive oil, and combine with cheeses instead of green chilies. Or top with sliced tomatoes halfway through baking. Serve with sour cream.

I make this every time we go camping. Very easy 1 skillet meal everyone loves it.
frozen tater tots (i use the onion ones but plain works)
eggs
sausage(not links or patties) or chopped up bacon (or both!)
cheese
cavender's or other greek seasoning

Brown the breakfast meat when it is about half way done, pour off 1/2 the fat and add 1/2 -3/4 of the tater tots. cook till they're browned and add in the beaten eggs. Add a lil seasoning and top with some cheese and voila! yummy breakfast. This usually takes about a half hour or so to cook.
