I make this Lemon Bundt from Taste of Home every Easter, it is light and wonderful!! Fill the middle with strawberries.
This dessert starts with a convenient boxed cake mix. "The cake and glaze have a mild lemon flavor that's delightful paired with fresh berries," says Leanne Kistler of San Antonio, Texas.
BERRY FILLED LEMON BUNDT
INGREDIENTS
1-1/4 cups water
Frozen or refigerated egg substitute equivalent to 3 eggs
1/4 cup plain nonfat yogurt
1 tablespoon grated lemon peel
1 package (18-1/4 ounces) light yellow cake mix
1/2 cup confectioners' sugar
3 teaspoons lemon juice
2 cups sliced strawberries
DIRECTIONS
In a large mixing bowl, beat the water, egg substitute, yogurt and lemon peel; beat in dry cake mix. Beat on medium speed for 2 minutes.
Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
Combine sugar and lemon juice; drizzle over cake. Fill center of cake with strawberries. Yield: 14 servings. Editor's Note: Due to the egg substitute, this cake does not rise very high.
Melt-In-Your-Mouth Berry Trifle

Haven't tried this yet, but it looks beautiful! Cooking time includes placing the assembled trifle in the refrigerator for 4 hours to set. The instructions state that although you could use fresh berries, frozen berries work better because they give off more juice for the pound cake to absorb. From VT Sept 2006.

2 (10 ounce) bags frozen blueberries, thawed
1/2 cup sugar
1/4 cup lemon juice
3 cups low-fat vanilla yogurt
2/3 cup low-fat sour cream
1 teaspoon vanilla extract
1 (16 ounce) fat-free pound cake
1 cup raspberry jam

In a large bowl, toss together the stawberries, blueberries, sugar, and lemon juice.
In a separate bowl, combine yogurt, sour cream, and vanilla extract.
Cut the pound cake lengthwise into 4 thin slices. Spread first slice with 1/4 cup jam. Top with second slice. Continue with remaining slices and jam, finishing with a layer of jam on top of cake. Cut into 1/4-inch-thick slices.
Line the bottom and sides of a clear trifle dish or large glass souffle dish with the cake slices.
Spoon in half of the fruit.
Top with half of the yogurt mixture.
Layer with remaining slices of cake, fruit, and yogurt mixture.
Cover with plastic wrap. Chill 4 hours, or overnight, to allow the trifle to set.
