What is your favorite kind of way/recipe to have chicken?!
Answers: I get sooooo bored because we eat soooo much of it. Any quick , yummy, easy, & healthy ideas.
I get bored with chicken, too. But we tend to jazz it up by having "stuffed" chicken breasts. You can stuff with an herb mix with some mozzarella and diced tomatoes, or other variations....lots of cheese and goodies on the inside can make a dull chicken night a really great meal.

You can't beat fried chicken. But I like chicken and dumplings too!

chicken parmesan is good. dip boneless chicken (pound it first to make it thin) in egg and then italian breadcrumbs, fry in olive oil in pan for 4 min. on each side. put in glass baking dish, cover with spaghetti sauce and mozarella cheese. sprinkle with parmesan cheese and bake in 400 degree oven for about 25 minutes. it's really good and easy
baked in the oven with diced tomatoes!
Chicken Parmesan
Ingredients:
* 4 boneless, skinless Chicken breast halves
* 2 Eggs, beaten
* 1 cup Italian Bread Crumbs
* 1/4 cup Olive Oil
* 1 jar Spagetti Sauce (15-1/2 oz.)
* 1/2 cup grated Parmesan Cheese
1 cup (4 oz.) shredded Mozzarella Cheese
Method
Preheat oven to 400. Dip chicken into eggs and into bread crumbs. Heat olive oil. Cook chicken in oil until well browned on both sides. Pour spaghetti sauce into 11x7" baking dish. Place chicken on sauce and top with cheeses. Bake 15 minutes or until cheese is melted and lightly browned.
Roasted whole chicken with potatos, onions, carrots in the pot with it, season with poultry seasoning, salt, pepper, garlic, any spices you like.........also shake and bake is good and easy
My fav is chicken marsala, but not the healthiest.
Here's a healthier choice, and easy.
Take a whole chicken and put in a (covered) roasting pan/dutch oven with fresh garlic cloves, rosemary , salt, pepper, chunks of onion, carrot, and halved or whole new potatoes. Put about 1 cup (or less) of chicken broth in the pan. Bake, covered, at 375 until done. If you want crisp skin, remove the lid for the last 20 minutes. If you wish to make gravy, strain the liquid and reduce on the stove with a little roux. Make sanwiches or a casserole with the leftovers, or chicken soup!

Holiday Chicken Salad
INGREDIENTS
4 cups cubed, cooked chicken meat
1 cup mayonnaise
1 teaspoon paprika
1 1/2 cups dried cranberries
1 cup chopped celery
2 green onions, chopped
1/2 cup minced green bell pepper
1 cup chopped pecans
1 teaspoon seasoning salt
ground black pepper to taste
DIRECTIONS
In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
Serve on lettuce cups, or make sandwiches. Stand back and enjoy the applause!
