Anyone have a recipe for potato salad that has?!
Answers: crawfish in it? It was kind of a special recipe. I tried it a long time ago while visiting friends and for the life of me I can't remember the recipe. By chance would anyone have that recipe?
Maybe this is it:
Easter Monday potato salad
Makes 6 to 8 side-dish servings
From a crawfish boil:*
6 to 8 small unpeeled red potatoes
1/2 cup finely chopped smoked sausage
4 unpeeled garlic cloves
1 cup peeled crawfish tails
Also:
4 hard-boiled eggs, chopped
1 cup chopped yellow onions
3/4 cup mayonnaise
1/2 cup chopped green onions
1/4 cup chopped parsley leaves
Tony Chachere's Creole Seasoning or your favorite seasoning blend, to taste
In a large mixing bowl, combine potatoes, sausage, eggs and yellow onions, mixing well. Squeeze garlic pulp from skins into mayonnaise and blend thoroughly. Add garlic mayonnaise to potato mixture, coating all ingredients. Mix in green onions, parsley, crawfish and Creole seasoning. If mixture seems dry, add more mayonnaise. Cover and refrigerate for at least 3 or 4 hours or overnight before serving.
*If you don't have leftovers from a crawfish boil, boil potatoes, sausage and garlic together in water seasoned with crab boil seasoning (start with a very small amount so you don't overdo it); add peeled crawfish tails about 3 minutes before potatoes are tender.
nfd?
Crawfish? WOW! Never heard of it, but I would think you would just drop them in until it looks good. I don't make potato salad by a recipe anyway. I just put everything in til it tastes good.
