I assume you are looking for how to cut the onions into thin strips. Don't know the term but have added a link that shows how to do it.

The only French term I've heard for a way of slicing onions (or other vegetables) is "Julienne".

The word you are searching for is Frenching, or French cutting, which refers to thinly slicing onions into strips.

From the spellings you are using to describe the term, it seems like you are referring to Frexinet which is a Spanish cava (sparkling wine similar to champagne).

Frenching were I come from is to use the tongue.
Usually in the mouth of some other person.
Can be used other places,like the ear!!!!!?
Difficult to slice with tongue in cheek.
