We do this all of the time. Any small shallow metal pan will do. If you don't have one you can use an aluminum foil pouch with slits in the top. Either one can be placed under the grilling surface and close to the heat source. Simply place the chips on the aluminum foil and roll the edges together to make the pouch. Cut long slits in the top and you are ready to go. Don't forget to soak your chips in water before you start. We usually soak ours at least a couple of hours. The trick is to not get impatient and start grilling until the chips are really smoking good.
I've used foil to make a Long, narrow, shallow "trough" and put the wood chips in that and centered it in the fire bed of the grill. The wood (usually mesquite, but sometimes oak or apple wood) smokes really well and the ash doesn't mess up the works.
Get some disposable aluminum pie tins. That's what I use. You may want to soak the chips first to prevent them from going too fast, unless you're really wanting a lot of smoke. Then you just put them on top of the grill and keep the lid closed as much as you can.
Keep in mind that the wood you choose will have a serious effect on the flavor that is added. Hard woods are best, and I prefer fruit tree woods like apple or cherry. Mesquite and hickory are kind of bitter.
Soak them in water for a half hour, then put them on the grill surface. Put the food alongside them, and close the grill. The wood chips will smoke, and the smokey flavor will flavor the food.
The best place to use wood chips, though, isn't in a regular grill, but in a smoker. Smoking results in wonderful ribs, brisket, or pork shoulder.
You can still keep your gas grill for heating up hot dogs for the kids, but if you are cooking for people who know the difference between good cooking and mediocre, you probably want to use a charcoal grill.
go out and buy a small smoker do not use treated wood chips they will work with any gas BBQ but don't use inside as smoking foods causes smoke hickory wood chips gives great flavors
Take extra heavy duty foil. Make a pile of chips(Hickory is my fav) fold the foil around the chips so they are sealed. Poke 3 or 4 very small holes in one side of foil. While grill is heating add this to one side holes up. When the get hot enough the will smoke but not flame. This will give steaks a great flavor yet not so strong.
Soak them good and wrap in h/d aluminum foil and poke holes in top lay on the hot side of the grill.
