Ever had German Lasagna?

German Lasagna

? cup butter
? cup all purpose flour
1 Tbls beef bouillon granules
2 tsp onion salt (or onion powder)
2 tsp pepper – divided

2 ? cups milk
1 can (14 ? ounces) chicken broth
1 pound smoked kielbasa or Polish sausage – chopped

2 eggs
1 ? cups (12 ounces) small curd cottage cheese)

9 lasagna noodles, cooked and drained

16 ounces can/jar sauerkraut, rinsed and squeezed dry

2 cups (8 ounces) shredded Monterey Jack cheese, divided

Preheat oven to 375

For the sausage mixture: In a large saucepan, melt the butter. Stir in flour, bouillon, onion salt/powder, 1 tsp pepper. Stir/whisk until smooth. Gradually stir in milk and broth. Bring to a boil, cook and stir for 2 minutes or until thickened. Add the sausage and heat through. Remove from heat.

For the cheese: Combine eggs, cottage cheese and remaining pepper.

Sauerkraut: After squeezing dry the sauerkraut will need to be separated into a bowl.

Making the dish: Spread 1 cup sausage mixture into the bottom of a 9 x 13 x 2 inch casserole dish. Build the lasagna as follows:

? 1/3 the remaining sausage mixture
? ? the cottage cheese mixture
? ? the sauerkraut and ? cup Monterrey Jack cheese
? 3 noodles

? rest of the cottage cheese mixture

Cover and bake 60-70 minutes until bubbly. Spread remaining cup of MJ cheese, bake 5 min. longer until cheese is melted. Let stand 15 minutes before cutting.

Ooh, gotta try kraut with pressure-cooked neckbones. The bones take some work to eat, but they are worth it. And try kraut on sandwiches.

My mother used to fix Kraut and pork neck bones. That's hard to beat. The fat from the neck bones moderated the sour of the kraut.

We love roast pork with carrots and sauerkraut. We make more of a hot sauerkraut salad - not just rinsed and heated. My sister-in-law didn't like sauerkraut, but we didn't know it when my mother first fixed this for her. Now her family fixes it at least every New Years Day. And I've fixed for friends that also didn't think they liked kraut - they went back for seconds!

Sauerkraut Salad (Hot)
1 # sauerkraut - washed and drained
2 Tbs. brown sugar
2 Tbs. ketchup or chili sauce
1 tsp. caraway seeds
1 small onion - chopped
2 Tbs. pickle relish
1 Tbs. parsley
1/2 cup green pepper - chopped
1 tsp. sage - optional
Mix all ingredients together.

Place in pan around browned and seasoned pork roast. Add sliced carrots on top of kraut. Finish cooking roast in 325 - 350 F oven (covered pan). Serve kraut on top of mashed potatoes. Don't forget the applesauce!

Rueben sandwiches are the best!

I like simmering polish sausage and saurkraut with a beer and a bit of chicken broth (rinse the kraut first.), bay leaves and caraway. You can do it with white wine too. Cut the sausage into chunks, on the diagonal.
