Cauliflower recipes--any suggestions for an interesting way to prepare and serve a colly?!
Answers: My fave is plain colly with cheddar cheese melted, but what else could I try today?
I like this one.
Boil the cauliflower until nice and tender with a clove of garlic. Fry a couple pieces of bacon until nice and crispy. Put the cauliflower and garlic into a food processor and add some milk or heavy cream, butter, salt and pepper, and crumble the bacon in. Hit the button a couple of times but don't over do it. I like mine a little chunky still. Sometimes I add green onions or chives. Have fun with it, try adding different cheeses (parmesan would be perfect) our maybe sour cream instead of milk.
Break up the cauliflower into florets; saute in plenty of butter until slightly soft. Toss in about a cupful of plain breadcrumbs and Parmesan cheese to taste. Continue to saute until breadcrumbs are brown and buttery. Add pepper. Enjoy!
I like my colly almost naked. Just steam it and sprinkle on a little lemon pepper.

mash them like you would potatoes. You can add cheese, bacon or any thing you can think of.
I like to add other vegies to the cauliflower. Fresh broccoli, sliced portobello mushrooms, and leeks. I cook the vegie medley in the microwave (yes, gasp!) and I top it with cooked crumbled bacon and crumbled bleu cheese. Yummm!!!
this is my familys fav ; Boil the cauliflower untill almost done and then save some of the water off of the cauliflower add flour and add cauliflower to the flour after draining . make it like a batter and spoon it up and drop into hot oil and drain on a paper towel . really good .
Susan B has the best way....however, while the butter is melting, I add a coupla cloves of thinly sliced garlic to the party.
Right before I take it out of the pan, I squeeze a healthy half-lemon over it and toss in some minced fresh parsley...give it a stir, season to taste and yummy it all up.
It's healthier than cheese sauce too....
Precook the cauliflower florets - they should be still firm,
prepair a crepe,(eggs flour milk water salt), whisk the flour and the eggs together in a large mixing bowl. Slowly stir in the milk and the water. Add the salt and beat the mixture until smooth,dip the cauliflower florets in and fry them in hot oil. It tastes wonderful.
Cut make a wet batter, and fry them , dipping sauce, ranch dressing.
very simple and quick....boil or saute until soft and pour melted velveeta cheese on it.....
Break into florets and boil in chicken stock. Mash as you would potatoes and sprinkle with grated cheese, serve.
Bacon Bacon Mashed Cauliflower
Ingredients
1 head cleaned, cooked cauliflower
2 Tbsp. Bacon Bacon? or Garlic Garlic?
8 oz. sour cream
Saltand pepper to taste
Directions
Mash cauliflower; add remaining ingredients. Makes 2-4 servings.
