HEARTROCK HOUSE DRESSING

1 (24 oz.) carton of low-fat (1 1/2 - 2%) cottage cheese
1 (32 oz.) carton plain low fat yogurt, or 2 c. of non fat buttermilk
1 (1 oz.) pkg. Ranch powder salad dressing mix

Blend cottage cheese and yogurt-buttermilk on high in your blender until creamy. Add ranch powder mix to season, usually one package is sufficient. If you prefer a thinner dressing, use skim milk. Makes 33 (2 ounce) servings.

a house salad dressing means that it is the 'house's' recipe. every restaurant has a 'house' dressing. if you want a good low fat dressing try this:
in a bowl, add
3 T red wine vinegar,
black pepper,
sea salt,
fresh thyme,
1 T dijon mustard
1 clove garlic, very finely chopped, or crushed into paste

whisk this together, then slowly add extra virgin olive oil while whisking. you want a 3:1 ratio, oil to vinegar. this is a basic recipe for vinaigrette. use different substitutions, such as lemon juice, balsamic vin, apple cider vin, differnet spices, herbs, etc.
