Ham and bean soup?!


Question: My gram made a great ham and bean soup but I was too young and stupid to bother learning from her. She is gone so I can't ask her. What are the better ham and bean soup recipies. I am cooking stupid and need to know the exact names of the beans to buy and how to put it all together! I do ask too much, don't I ! Thanks and God Bless.

Ham and Bean Soup II

INGREDIENTS

* 1 pound dry navy beans, soaked overnight
* 4 quarts water
* 1 pound leftover ham bone with meat attached
* 1 onion, finely diced
* 2 carrots, sliced
* 2 stalks celery, diced
* 1/4 teaspoon garlic powder
* 1/4 teaspoon ground black pepper
* 1/2 teaspoon paprika


DIRECTIONS

1. In a large stock pot, add water, ham bone and pre-soaked beans. Bring to a boil, reduce heat and simmer until beans are close to soft.

2. Remove bone and cut off remaining meat. Remove 1/3 of beans and mash with potato masher or food processor.

3. Return ham and beans back to stock pot and add onion, carrots, celery, garlic powder, pepper and paprika. If you are using dripping from a previously cooked ham add those now. Simmer until vegetables are tender and serve.

1 pound Italian sausage
2 smoked ham hocks
3 potatoes, peeled and cubed
3 stalks celery, chopped, with leaves
2 tablespoons dried parsley
3 (15 ounce) cans kidney beans
1 (15 ounce) can tomato sauce
2 (14.5 ounce) cans stewed tomatoes
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon hot pepper sauce
2 bay leaves
1 teaspoon Worcestershire sauce
2 cloves crushed garlic



DIRECTIONS
Boil sausage to remove excess fat, and cut into bite-size pieces.
Skin ham hocks, and remove excess fat. In a large pot, brown sausage and ham hocks over medium heat. Drain off excess fat.
Add potatoes, celery, parsley, beans, tomato sauce, tomatoes, salt, pepper, chili sauce, bay leaves, garlic, and Worcestershire sauce to the meat; add just enough water to cover. Bring to boil, then reduce to simmer. Cover, and continue to cook for 2-3 hours.
Remove ham hocks and cut meat into bite-size pieces. Return meat to pot. Serve.

IWas brung up on the Ham bone Jack Rabbit dry navy beans and onions as the only ingredients. Never saw the preparation, but know the beans have to be soaked.

YOU NEED SMOKED HAM,AND BEANS CAN BE VERY DIFFRENT WAS THE BEANS WHITE NORTHEN, PINTO BEANS WAS THE SOUP WITH TOMATO BASE OR JUST PALE IN COLOR NAMASTE

cindererl has one that is almost like my mom / grandma's bean soup. it is traditional. you can also look at home and gardens recipes. they are usually pretty close to good ole family cooking.

OLD FASHIONED BEAN WITH HAM SOUP

1 lb. dried Great Northern beans, rinsed, drained & picked over
2 smoked ham hocks, about 2 lbs. or scraps & pieces from leftover ham
1 lg. onion, chopped
1 clove garlic, minced
1 lg. potato, pared & cubed
2 ribs celery, finely chopped
1 lg. carrot, shredded
2 tbsp. fresh parsley, minced
Pepper

In large soup pot combine beans and 2 1/2 quarts water. Discard any beans that float to the surface. Bring to a boil, cover. Continue to boil 2 minutes. Remove from heat and allow pot to stand, covered 1 hour. Add ham hocks, onion, garlic; cover and bring to boil. Reduce heat and simmer 2 hours. Add potatoes, celery, carrot and parsley. Cover and continue simmering, at least 1 hour or longer.
Remove ham hocks, separate meat from fat and bones. Dice meat and return to soup. Discard fat and bones. Season to taste with black pepper. Makes 6 hearty servings.

Usually made with navy beans. I've made it with black beans , kidney beans , and a mix of all three . It all works . Soak the beans overnight, or all day even. Add the ham , a couple chopped onions , a chopped pepper ( optional ) , molasses and mustard ( not sure how much - ~ 1 tbs molasses , 1 tsp dry mustard, or tbsp otherwise ) . Start cooking . After it's actually soup , add salt ( probably don't need it ) and pepper to taste . There are other variations, but that's all optional .

I tried "Drunken Beans " , from Chile Pepper magazine. Mmmmmm. Was very good . The beans ( black in the recipe, but doesn't matter) are soaked in 1 beer .Dark, malty beer, such as a brown ale is best The alcohol breaks down the protein in the beans , making them more tender, and more quickly . It disappears in cooking . Here's the twist, add 1 zucchini along with the pepper and onions . That sweetens it , eliminating the need for molasses, or brown sugar .

I used to soak beans and the whole bit. But for a fast soup I use a few cans of navy beans. Celery and onion in all soup. You can buy a ham slice, add some carrots. Let it cook. If it isn't thick enough you can mash the beans with a potato masher.

My English grandmother would put a little vinegar in her dish.

I love making a mixed bean soup. I get it at a grocery store, in the dry beans/split pea section, where they have a variety of packages with all sorts of beans, lentils and split peas to make soup out of. This mixed bean package, had every kind of dry bean you can think of including some split peas. Its all done for you! See if you can find mixed beans all in one package, at your local grocery store, like I did . .before you consider buying them seperately. Instructions how to cook them, are on the back of the package. You can add the ham or whatever meat you want in it, near the end of cooking the soup. I get these dry in the package beans, lentils, and split peas to make mixed bean soups and split pea/ ham soup, etc . .for my son and I, as small lunch meals. (hubby doesn't like beans or peas)

Mixed dry beans, lentil and pea are very good to make into soups. As soups, they really good for your health, because you retain alot more of the nutient and vitimans that are in them. You can add how much salt and whatever spices you like, too . .making it more insteresting to make . .because you are in control of everything that is put into it.
