Frozen puff pastry dough & chicken pot pie?!
Answers: In the recipe, it says to put the cooked chicken & hot gravy into to puff and then bake it until the dough is cooked, but I want to make it ahead of time and bake it right before dinner. How will the fact that he cooked chicken & gravy are cold effect the baking of the puff pastry? Can I di this?
You may have to cook it longer to heat up the chicken and gravy. This may overcook the puff pastry. You could not assemble the pie until right before cooking. Have the chicken and gravy made, but reheat it on the stove top and then assemble the pie.
Just reheat the chicken gravy, while your cooking the pastry and put it together before you serve it. You can have the gravy in the bowls, then put the pastry on top of the gravy mixture.
that wont work at all, I sell this in my restaurant, I use 12 oz casserole dishes, fill them with preheated chicken pot pie mix then bake of strips of puff pastry (takes 15 seconds in my broiler) and top the pot pie with them. one of my best sellers.
I would prebake the crust.
The pastry should only take 10 mins or so to crisp up and rise, which won't be enough time to heat up the cold filling, so I suggest heat the filling in a pan over med heat before baking, then fill the pie dishes while hot, top with the defrosted pastry squares and bake for a few mins. Unlike other pies, the baking here is just to crisp up the pastry, not to actually cook the filling.
I agree with all the recommendations to reheat the filling, then fill and bake. Since all your answers were from ladies, I just wanted to add my endorsement for the point of view of a man who loves to cook!
