Coconut frosting?!


Question: Does anyone have a simple coconut frosting receipe handy? Please no links, have searched the web already. Would like to find one someone has actually used and liked. Thanks.

4 T. sweetened condensed milk
1 1/2 boxes powdered sugar
12 ounces cream cheese, room temp.
1 c. coconut

Mix first 3 ingredients well. Ice between layers, sprinkle with coconut, ice top and sides and sprinkle with remaining coconut.

Also good to add 1 t. coconut extract to the icing, if you have family that really likes coconut! My husband loves coconut, and I do this sometimes -- when I think about it.

The best way to do coconut frosting, because coconut doesn't spread very well is to make a good cream cheese frosting and sprinkle the coconut on after you frost the cake. It is much easier to put on the cake and a lot more visually appealing.

2 (8 ounce) packages cream cheese, softened
1/2 cup butter or margarine, softened
2 cups sifted powdered sugar
1 teaspoon vanilla extract

I used this on my bf's birthday cake and he said it was the best frosting ever.

3/4 cup cold milk
1 pkg (3.3 oz) coconut instant pudding
1/4 cup powdered sugar
1 tub (8 oz) Cool Whip
1 cup sweetened flaked coconut

Combine the first 3 ingredients, then fold in the Cool Whip. Frost cake and then pat the coconut on top.

You'll have to refrigerate this cake, of course.
