This is a frosting that's perfect for sugar cookies.

INGREDIENTS
2/3 cup butter, softened
4 cups confectioners' sugar
2 tablespoons milk
1 teaspoon vanilla extract (optional)
4 drops red food coloring

DIRECTIONS
In a medium bowl, cream together the butter, confectioners' sugar, and milk until light and fluffy, about 3 to 4 minutes. Beat in the vanilla and food coloring. Spread on or between cookies.

Use butter icing
easy just cream butter and icing sugar (it wont go hard)

if you dont want chocolate, there's Butter Icing for Sugar Cookies

INGREDIENTS
1 1/2 cups confectioners' sugar/icing sugar
3 tablespoons butter, softened (or cream cheese if preferred)
few drops vanilla extract
1 tablespoon milk
3 drops food coloring of your choice
1 (2.25 ounce) jar coloured decorator sugar OPTIONAL

DIRECTIONS
Combine confectioners' sugar butter, vanilla and milk, beating until creamy. Thin with a few more drops of milk (if necessary) to reach desired spreading consistency. Stir in optional food coloring. Spread frosting over cooled cookies and decorate with colored sugar, if desired

edit- forgot to mention the second recipe will make you about a cupful of frosting. happy baking :)

I like to use powdered sugar and milk. I also add a little vanilla or some other flavoring. You can also add a tiny bit of butter or margarine. Just put the powdered sugar in a bowl and add the flavoring and , if you want, food coloring. Then stir in enough milk to make it spreadable. It doesn't take much. It will get firm, hard but not hard like royal icing. It will be hard enough it won't run and smear . If you want soft icing, just buy cake icing in a tub and use it.
