To all of you cooking experts... I need some tips?!


Question: Yesterday, I cooked a chicken in my crock pot with tomatoes, peppers, onions, spices etc. with the intention of making chicken tacos for dinner...Well, as life sometimes does, things didn't go according to plan and due to a family crisis, we ended up doing something different for dinner.

The weather here just turned unexpectidly cold so tacos don't sound good, but I was thinking about turning it into a casserole of some sort, still keeping with the mexican theme. I have Corn & flour tortillas, the cooked chicken, sour cream, cheese, etc... any ideas on how to make this into a new meal? I was thinking that I may just layer corn tortillas, chicken, sour cream and cheese and bake it until it's warm and bubbly, but maybe someone here has some better ideas? I'd like to make something special but that I can whip up after work... Thanks in advance!

What about making some quesadilla? Instead of the beef, put your chicken in there. This weekend I made some. Spray a cooking spray in the pan, put your flour or corn tortilla, put some refried beans in there, your chicken ( beef alternate ) mixed with taco seasoning, then put some cheese, any kind then put another layer of your flour tortilla. Make it a little crispy, then use your pizza cutter and slice it into part. You can put guacamole too if you want. then put also hot sauce, if you want.Enjoy :)

that sounds great. i would add a little rice.

I like that idea with the layering it but keep the cold stuff for the end as dipping or something like that but layer it with the cheese and some on top and bake in till the cheese melts or browns since the chicken will already be cooked Hope that helps

Sounds like you have a good start on your idea. Layering is a great way to take your ingredients and make a sort of mexican themed lasagna.

Something else you can do is take the meat and juice (I assume there was some left!), add some chicken broth, and a little of your sour cream; cut your tortillas in strips, quickly fry them; put tortillas in bowls, pour soup on top, add sour cream and cheese...quick tortilla soup.

Just an idea. I like taco cassarole, too!

Youcould make a chicken taco salad. Or mexican chicken wraps.

Make a salad with lettuce, tomates, onions, cheese, top with chicken, salsa and sourcrean and gaucamole if you wish. Add some corn torilla pieces on the side.

Flour tortilla, add chicken, salsa, sour cream, tomatoes, onions, cheese, and beans (if you like), either eat them like that, or put in a shallow baking dish, top with cheese and banke til hot and bubbly.

what you have in your crock pot sounds wonderfull,,, cook a pot of rice and warm up your crock pot of stuff put the rice on the plate and spoon the crock pot stuff over it it will be wonderfull , if you try this please let me know how you like it , i do a dish like this from time to time and y family loves it :-)

Here's one that I like. I just use whatever is on hand, but it sounds like you have most all of the ingredients.

layer the flour tortillas w/ the chicken alternately. i.e. tortilla, chicken, tortilla, chicken, tortilla. however many you want or will fit, just as long as the tortilla is on the top and bottom. then cover with cheese and baked uncovered until it begins to brown. in the meantime slice thin strips of the corntorilla and fry them in a deep fryer or frying pan. when the dish comes out put these on top followed by dollops of sour cream.

My family loves taco pie. I layer the following in the following order.

Salsa
Soft tortilla
Refried beans
Meat
Cheese
Corn

I end with a tortilla topped with salsa. Bake in a 350 oven for about 30 minutes. I make it in a pie pan, but you can make it in whatever. Top with some sour cream. My family loves this meal.

Another thing you can do is add a quart of chicken stock, extra seasonings and 4 - 5 crunchy tortillas to a pot for soup. Serve with freshly fried soft tortillas and sour cream.

I have no idea what the weather has to do with Taco's, but if you are convinced it's not a good thing then you can ad cream of chicken to all of that and then top the casserole with cheese.

There are endless things you can do with it. Be creative and make up something different. Personally, I would use the flour tortilla's and make burritos! After you make them add cheese on the top and microwave for 20 seconds or until you get a slight melt. You can preserve the tortilla (in the microwave from getting hard) by coating with a little salsa then the cheese. Don't forget to put all of your ingredients in the burrito also, including extra cheese!

u could make some green chicken enchiladas, u can buy chopped canned green chiles,cream of mushroom and cream of chicken (family size) in a big pan mix the two cans together and 2 cans of water (from the soup cans) and simmer until creamy, then add chicken (pulled apart or chopped) and the green chilies and stir and heat until hot, fry corn tortillas in cooking hot cooking oil, -just a dip on both sides (they should be soft not hard, chop onion and grated cheese and then in a cake pan add some soup mixture just to lightly coat bottom of pan- so corn tortillas don't stick- and cover with a corn tortillas cheese onions and then soup mixture- make sure to put enough because tortillas will soak up soup and u will end up with a dry enchilada- repeat the layers 2 more times and pop in oven till bubbly let set about 15 min. then serve, top with shredded lettuce, chopped tomatoes, and sour cream dollop!

I wouldn't bake sour cream... but layering the tortillas, chicken, and cheese with a little red enchilada sauce will give you a nice casserole that you can top with the sour cream. Just remember to press down each layer before adding the next one. Top with cheese and bake at 350 for about a half hour.

This sounds a lot like my mom's enchilada casserole, which is a hit wherever I take it.
