Almost Fat-free Chocolate Cupcakes
1 1/3 cups All-purpose flour
1/2 cup Unsweetened cocoa powder
1 1/2 teaspoons Baking powder
1 1/2 teaspoons Baking soda
2 teaspoons Salt
3/4 cup Packed dark brown sugar
1/4 cup Applesauce, cinnamon
1 Egg
1 Egg white
1 tablespoon Oil
1 teaspoon Vanilla extract
2/3 cup Skim milk
Powdered sugar, optional
Directions:
Preheat oven to 350F. Line 12 muffin cups with paper liners. Combine flour, cocoa, baking powder, soda and salt. Beat the next six ingredients until combined, about 1 minute. Stir in flour mixture alternately with milk until just combined. Pour batter into muffin cups. Bake 22-25 minutes or until toothpick comes out clean. Remove cupcakes from pan; cool on wire rack 30 minutes. Sprinkle with sugar, if desired

How about making cupcakes then topping them with low fat cool whip and then slices strawberrys.
i dont have a specific recipe...but i think if u just replace real sugar wit splenda it would probaly cut the calories...sugar makes u fat!
Here's 2 super easy and really yummy Weight Watchers recipes that make cupcakes
Take one box dry chocolate cake mix (or use spice) and 15 oz can of pumpkin (not the pie filling) and 1/2 cup water. Mix together and put into greased muffin cups. Sprinkle with powdered sugar when done., The pumpkins makes them moist but adds NO flavor.
Take one cake mix (any flavor) and add 1 12oz can of soda (any flavor). Mix together with 2 egg whites or 1 whole egg. It will bubble up. Stir well but do not beat. Pour into greased cups. It really works and great cuts down on the calories. You can make up infinite flavor combinations by mixing and matching cake and soda flavors. it doesn't matter if you use diet or regular soda.

i have a great desert very low fat and can be made suger free
take one angel food cake (suger free if u like) tear it into small pieces in large bowl
slice some bananas or strawberrys or both in with the cake
add low fat lite cool whip
it is light and great....
Here's a REALLY easy one.
1 box cake mix (any flavor you like)
1 12oz can diet soda (complimentary to the cake flavor)
Mix and bake.
Now you can go REALLY healthy and use low fat cool whip for the topping. OR you can buy a can of frosting and throw it in your mixer for a few minutes. It will double in volume and it cuts the fat and calories (no lie). I am not saying you should SLATHER your cakes. But a little frosting would be ok.
Here are some flavor combos:
Chocolate cake with diet coke (any kind)
Vanilla cake with diet cream soda or diet root beer
Lemon cake with diet sprite or 7up
Use your imagination!
