I take mine and I melt butter into olive oil and add onions and green peppers . I then add stew meat and let all of that cook down untill the liquid looks like a gravy . put on some hoagie rolls and wallah you have steak sandwiches my kids and my family love these .

Chile is so good made with stew beef!

You can make kabobs, with tomato green pepper and onions, marinate the meat for an hour if you want, then put them in the broiler until cooked, about 5-10 minutes depending on the temp

Stir fry

You can make vegetable beef soup,

or you can make shish kebabs---

just marinate the meat in your favorite sauce (or even try Italian dressing), then thread the meat onto skewers with some veggies--cherry tomatoes, onions and peppers are classics. Just don't try any "hard" veggies like carrots or potatoes--they all have to finish cooking at the same time. After you get the skewers threaded just pop them on the grill, or if it's too cold to grill you can use the broiler on your oven. If you use wooden skewers you should soak them for about 30 minutes first to prevent burning.

Another good one---beef pot pie.

**********CROCK POT BEEF STROGANOFF
Stew beef
1 pkg. Lipton onion soup mix
1 can cream of celery soup
1 can cream of mushroom soup
Sliced mushrooms (optional)
1 c. water
8 oz. sour cream
Egg noodles
Brown stew beef in skillet. Place in crock pot with soups, onion soup mix, water, and mushrooms. Cook 6-8 hours on low. One-half hour before serving, add sour cream to mixture. Serve over egg noodles.

i make a wonderful "stir" fry with mine

place in wok or deep boiler with about a tablespoon of oil, season salt, peper, chopped garlic and onion and sautee till meat is almost done

then add one package of stir fry vegtable mix frozen....add about 1/2 c water and let simmer till almost done

then i add a small amount of soy sauce and either duck sauce or sweet and sour from a jar... I keep some in the fredge....i say around 3-4 tablespoons of sweet and sour and maybe 2 teaspoons of soy.. let that simmer for about 10 mins

then i make a wonderful bed of rice or thin noodles to serve it over

VEGETABLE BEEF SOUP

1 1/2 lbs. beef stew meat, cut sm.
3 c. water
3 cans beef broth
3 c. or 1 lg. can V-8 juice
1/3 c. chopped onion
1 tbsp. salt
2 tsp. Worcestershire sauce
1/2 tsp. chili powder
2 bay leaves
1 (15 oz.) can tomatoes with juice

Add all above to a big pot, cover, simmer 2 hours. Add 1 package frozen vegetables for soup. Simmer 1 more hour covered.

Beef Bourguignon II
INGREDIENTS:
? 2 tablespoons all-purpose flour
? 1/2 teaspoon salt
? 1/4 teaspoon ground black pepper
? 1 pound cubed stew meat
? 2 tablespoons butter
? 1/2 onion, chopped
? 1 carrots, chopped
? 1/2 clove garlic, minced
? 1 cup red wine
? 1/2 bay leaf
? 1 ? tablespoon chopped fresh parsley
? 1/8 teaspoon dried thyme

DIRECTIONS:
1. In a small bowl, combine the flour, salt and ground black pepper. Coat the beef cubes with this mixture.
2. Melt the butter or margarine in a large skillet over medium high heat. Add the meat and brown well on all sides. Pour this into a 2 quart casserole dish.
3. Return the skillet to the heat and add the onion, carrots and garlic to it. Sauté for 5 to 10 min. or until onion is tender. Add the wine, bay leaf, parsley, and thyme. Pour over meat and stir.
4. Bake, covered, at 350 degrees F (175 degrees C) for 2 1/2 hours.

the cut of meat isn't very marbled so it needs to be slow cooked. when this type of meat is slow cooked, becomes very tender. the best recipes involve braising, stove top or oven, for stew meat. if you are used to american/european style stews, try doing a thai style curry, using store bought curry paste, coconut milk, potatoes, carrots, zuchini, etc.
brown meat, remove from pot, saute veg, add curry and saute a minute. add coconut milk,and deglaze. add meat and simmer until meat is tender. finish off with chopped fresh basil.

other ideas:
*oven or crockpot bbq beef

*dice chunks and add to a soup with barley or a minestrone.

*cut into smaller pieces, marinade overnight in olive oil, rosemary and garlic with a touch of red wine. the next day, wrap each piece of meat with a thin piece of pancetta and stick onto metal or wet bamboo skewers. grill or broil, until done.
(because you have cut pieces smaller and marinaded the meat, it can be cooked faster. the addition of pancetta keeps it nice moist. you can cook these skewers quickly and not slowcooked like the other recipes i offferd.
like pork, some kinds of beef need to be cooked either quickly or for a long time. in between makes for tough meat.

Oven-Baked Bourguignonne

2 pounds chuck steak, cubed
1/4 cup all-purpose flour
1 1/3 cups sliced carrots
1 (16-ounce) can whole tomatoes
1/2 cup red wine
1 package dry onion soup mix
1 bay leaf
8 ounces sliced mushrooms
Hot cooked noodles for accompaniment

1. Preheat oven to 325°F (160°C).
2. In a Dutch oven or deep baking dish, toss steak with flour. Bake, uncovered, for 20 minutes.
3. Add carrots, tomatoes, wine, soup mix and bay leaf.
4. Bake, covered with ovenproof lid or aluminum foil, for 1 1/2 hours, or until beef is tender.
5. Add mushrooms and bake, covered, for an additional 10 minutes. Remove bay leaf.
6. Serve beef over noodles.

Beef and noodles served on mashed potatoes!!
