What type of buns? You need to narrow this down a little bit. Do you want yeast buns? Whole wheat buns? Sweet or savory buns? Filled bun?

This is the recipe I use for parker house rolls. Make sure you follow the directions to the T. http://www.epicurious.com/recipes/food/v...

make the same dough as you'd use to make bread but put it into bun shaped baking trays.

weigh 3 eggs whatever weight they are use the same weight in flour sugar and margerine. mix the margarine and sugar together until creamy, then add the eggs 1 at a time mixing in with a spoon. then fold in the flour until its all mixed in. add to a tin or small baking cases and cook for 12-15 mins on 180c

Plain Buns
To every 900g (2lb) of Flour allow:
285ml (? pint) Milk
225g (8oz) Butter
170g (6oz) Moist Sugar (Soft Brown Sugar)
80ml (3floz) Yeast [or

Modern Equivalent]
Warm Milk

Put the flour into a basin, mix with the sugar.
Make a hole in the centre and stir in the yeast and milk (which should be lukewarm), with enough of the flour to make it the thickness of cream.
Cover the basin over with a cloth and let the sponge rise in a warm place, which will take about 1? hours.
Melt the butter, but do not allow it to oil.
Stir into the other ingredients, with enough warm milk to make into a soft dough.
Mould into buns about the size of an egg.
Place them in rows quite 7.5cm (3 inches) apart.
Put in a warm place, until they have risen to double their size.
Bake in a good brisk oven and just before they are done, brush with a little milk.
From 15 to 20 minutes will be required to bake them nicely.
These buns may be varied by adding a few currants, candied peel, or caraway seeds to the other ingredients.
Use the above mixture for hot cross buns, by putting in a little ground allspice and by pressing a tin mould in the form of a cross in the centre of the bun.

Time: 15 to 20 minutes.
Sufficient to make 18 buns.
